Mug Brownies for All

I love this recipe because it’s fast, simple, and easily adapted to all kinds of diets.  I don’t remember where I found this recipe years ago so I’ll just type it up here.

Makes one mug brownie

  • 4 Tbsp Flour (I used whole wheat, but you could use white, spelt, etc.  I might even try using chickpea flour in the future to get a protein boost)
  • 4 Tbsp Sugar (I’ve done this recipe with using only white sugar and a combination of 2 Tbsp brown and 2Tbsp white to get a more molassesy taste.  I’m sure you could do all brown or use coconut sugar.  It’s whatever floats your boat!)
  • 2 Tbsp Cocoa Powder
  • 2 Tbsp Oil (I’ve used vegetable oil and coconut oil.  Coconut oil tastes better, but that’s just me.  You could probably get away with almond oil, corn oil, etc.  I just wouldn’t use olive oil bc the olive flavor is too strong.)
  • 2 Tbsp Water
  • Dash of salt (I’ve used table salt and kosher salt for this.  Alton Brown is right Kosher salt is good stuff!  I’m a believer now.)

Directions:  

1. In a microwave safe mug mix dry ingredients together: flour, sugar, cocoa powder, and salt.

2. Mix wet ingredients into mug: Oil and water.  (If you are using coconut oil and it’s solid you might want to use hot water to help melt the coconut oil and ease the mixing process)

3.  Microwave mixture for 1 minute.

4.  Enjoy with a glass of your favorite kind of milk.  (I love almond milk!)

Raw Fudge Brownie Pie
Fresh fruit, coconut flakes and cacao nibs on a raw brownie fudge pie crust and a homemade caramel sauce. I guess you could say I like to play with my food!! Recipe will be up on my website when it’s ready (I’m thinking def by the end of this month). I’m realizing now how difficult it is to build a website from scratch but it’s a great learning experience and I love the challenge.

Why do vegans love peanut butter so much? I see so many yummy desserts but they have nuts or peanut butter:(

cus peanut butter is delicious. no but, nuts are amazing for you. Full of protein, heart healthy fat, zinc, calcium and iron. i’m sure you can take out the nuts though and work around it.
