Yields 3 dozen macaroons

The things you’ll need

  • 3 egg whites
  • ½ cup sugar
  • 14 ounces (1 bag) shredded sweetened coconut
  • ½ teaspoon salt
  • Zest of 1 orange
  • Juice of 1 orange
  • Large mixing bowl
  • Whisk
  • Wooden spoon
  • Cookie scoop
  • Baking sheet lined with parchment
  • Pan spray

Let’s get started!

  1. Preheat oven to 325ºF.
  2. In a large bowl, whisk together egg whites, sugar, salt, zest and juice until frothy.
  3. Use a wooden spoon to mix in coconut.
  4. Use a cookie scoop to place dollops onto a lined and sprayed baking sheet. Form each dollop into a haystack shape.
  5. Bake for 25-30 minutes or until light golden brown.

my autistic friend has a horribly loud neighbor, and gets terrible migraines from his loudness. she can barely sleep, and it affects her mood and her performance at college. the loud noises make her feel suicidal and think bad thoughts. she wears earplugs, but she doesn't like the way they feel. in addition, she's unmedicated, living in a shitty flat with landlords who've barely done nothing about the noise, and broke. any suggestions on how to make her feel better? Have you asked her what you can do to help? Offering to let her sleep over occasionally might help her get away and relax a bit, but she’d be the one to know what she needs.

Has she called the police about the noise disturbance? Typically, this is done through the non-emergency number for your local police station. They’ll usually go to the neighbor and let them know that there was a noise complaint and to be more respectful/quieter. Potentially, more action can be taken if the neighbor isn’t quieter.

But, all in all, when helping a friend, the best thing to do is ask that friend what helps.
