THE BEST. This breakfast feels kinda like you’re eating some kind of ice cream sundae but it’s nothing but goodness for ya tummy. It’s literally just a banana topped with beautiful meridian peanut butter (which is sugar, palm oil and salt free) a handful of dried mixed berries, a squeeze of agave syrup, flaked almonds, chia seeds and coconut. Healthy #lowcarb dinner. This is becoming my new fave for “pasta” dishes: use a carrot peeler and peel the outside of a yellow squash until you hit seeds. Blanch the #squashnoodles in boiling water for two minutes then plate and top with a #homemade #sugarfree pasta sauce! For the sauce: one can tomato sauce, one can diced tomato, tablespoon of preferred #cleaneating cooking oil, sea salt, red pepper flakes, oregano, minced garlic, black pepper, basil and onion powder. Simmer until hot. Super simple and extremely #healthy “pasta” dish. I ate this with a side of lemon pepper steamed broccoli. YUM! #vegan #healthyveganfood #italianfood #glutenfreevegan #glutenfree

Tonight I tried a recipe my friend Kelly shared with me called Anna Thomas’ Green Soup. It was DELICIOUS! I added some fresh tofu cubes to up the protein a bit which was a nice addition but not necessary. The soup stands on its own perfectly! I kinda wish I would have made a double batch because this could easily become my lunch every day for, like, ever! Yesterday’s brunch with @lmitchell08 🍴🍬 We made a pancake recipe that I saw on @hayleycarey_’s account ☀️

1.5 cups oats
1 banana
1 cup nut milk (we used cashew)
1 tbsp coconut sugar

Blend oats until they are powdered then add remaining ingredients and fry them up using a little bit of coconut oil!

We topped ours with blueberries (frozen and then heated I the ice to make a syrupy consistency), maple syrup, and coconut whip 🍥🍥 Easy, healthy, and tasty- my 3 necessities for food 😊

Oh and we had this with the goji tea I talked about in my last post! Yum

Dinner was a nommy protein smoothie of soy vanilla protein powder, vanilla soy milk, and 1 cup of frozen mixed fruit. Also my college started putting cute little notes up reminding the students of their “real beauty”, so that’s adorable…

We made 2 types Gyoza(Tofu,Kale) ,2 types Onigiri(Ume Puree,Sesame),Miso soup and Seaweed salad. 

Everybody was keen on learning how to make them and did a great job.
