1 year and 10 months ago today, my life changed. I was recently invited to speak at a health fair and ended my speech by saying that if I can inspire just one, my job is complete. In all actuality, I want nothing more than to inspire many. Your health is so important. It’s more than a number on the scale. I fight like hell everyday. Bittersweet grilled Organic Grapefruit with coconut sugar, rose water & cinnamon 🍋

Breakfast inspiration today, my first time at grilling grapefruit & I am pleasantly surprised.

Add 1 teaspoon organic coconut sugar on each half grapefruit, 1 teaspoon rose water & sprinkle cinnamon, grill for 5 minutes - Deliciousness! Add some walnuts, enjoy!

Avocados, Stuffed.

Hello friends!

Check out this yummy yet simple recipe: stuffed avocados. Everyone loves avocados and mother nature wanted us to stuff them because of the perfect well that is created once you cut open and de-pit the avocado. After kale, avocados are possibly be the world’s most perfect food! Let’s learn why avocado’s are such a badass superfood:

  1. High in carotenoids: Avocados are a great source of carotenoids, which work as an antioxidant and help protect against eye disease. 
  2. Can help you lose weight: Even thought avocados are high in unsaturated fat, they also contain oleic acid, a good fat that activates the part of your brain that makes you feel full. Healthier unsaturated fats produce a greater feeling of satiety than less-healthy saturated fats and trans fats found in processed food. 
  3. Can help stabilize blood sugar: Rich, creamy and packing with beneficial monounsaturated fat, avocado slows digestion and helps keep blood sugar from spiking after a meal. 
  4. High in folate: Folate is a vitamin that can cut the risk of birth defects (important for all you pregnant readers…I’m definitely not worrying about this one for quite some time though). Also, a high folate intake is also associated with a lower risk of heart disease.
  5. Can help lower your cholesterol: The oleic acid in avocados can help reduce cholesterol levels, keeping your heart nice and healthy!

Ingredients:

  • 2 avocados
  • 1 pepper (red, orange or yellow)
  • ¼ cup of tomato (or sun dried tomatoes, I used a combination)
  • ¼ cilantro (or more if you love it like I do)
  • ¼ sunflower seeds (or walnuts or combination)
  • ¼ ground flax seeds
  • 1 tbsp. tahini
  • ½ lemon, juiced
  • dash of chipotle chili pepper (more if you like it spicier)
  • salt to taste

Directions:

  • Place all ingredients, except the avocado, in a food processor and pulse chop until mixed. Do not over mix!
  • Cut the avocados in half, de-pit, and spoon the mixture into the well.
  • Garnish with some cilantro and/or salt
