Keto LC Meatball Parm

Meatballs

1.5 lbs ground beef
½ cup almond flour
¾ cup Parmesan cheese
2 eggs
Lots of Italian seasonings

Combine all ingredients and form about 15 meat balls.

Brown with bacon grease or oil in cast iron to get crispy or cook on oven to get soft texture.

When meatballs are cooked pour tomato sauce over meatballs in pan and cover with mozzarella cheese.

350 degree oven for 25 minutes

Let cool.

Delicious solo or over zoodles or spinach.

Risotto with white wine, garlic, mushrooms, spinach and green peas + a mixed lettuce salad with tomatoes, olives and balsamic vinegar. Since a friend introduced me to this risotto recipe I’ve been making it at least once every week. It’s beyond amazing and I’m always surprised by how good it tastes!

RECIPE // fettuccini spaghetti

Cook spaghetti al dente
Sauté ½ white onion and 1 clove garlic
¾ cup cashews, soaked overnight
1 tsp garlic powder
½ tsp Apple cider vinegar
½ tsp lemon
1 tsp nutritional yeast
½ cup water from spaghetti
Blend
1 tomato, chopped
½ onion, chopped
2 cloves garlic, diced
¼ cup vegetable broth
Sauté
Toss
Topped with micro cilantro
