Risotto with white wine, garlic, mushrooms, spinach and green peas + a mixed lettuce salad with tomatoes, olives and balsamic vinegar. Since a friend introduced me to this risotto recipe I’ve been making it at least once every week. It’s beyond amazing and I’m always surprised by how good it tastes!
Cook spaghetti al dente
Sauté ½ white onion and 1 clove garlic
¾ cup cashews, soaked overnight
1 tsp garlic powder
½ tsp Apple cider vinegar
½ tsp lemon
1 tsp nutritional yeast
½ cup water from spaghetti
1 tomato, chopped
½ onion, chopped
2 cloves garlic, diced
¼ cup vegetable broth
Topped with micro cilantro

We had an amazing meal at Zizzi the other day! One of our favourite places to eat, with a separate vegan menu. Vegan bruschetta with pesto and garlicky tomatoes and red onions, followed by their lentil ragu with linguini. So good!
