Here’s another lazy vegan girl meal (great for lazy vegan guys too, btw).

Let’s define ‘lazy vegan gal’ shall we? So she’s a gal who’s vegan (obvs.) and suuuper hungry but doesn’t want to spend more than 20 min (max) in the kitchen and really cares about good flavor. So, there you go. Pretty simple. However, a lazy vegan gal must be prepared so she can’t be tooooo lazy. If she has a stocked pantry, she can make almost anything in a snap. Keep in mind that there are variations of this vegan gal. She can definitely be super duper lazy and eat hummus sandwiches everyday. And hey, that’s cool. But this vegan gal wants a wee bit more. Sometimes…

Lazy Vegan Gal Chana Masala

1 cup diced tomatoes (canned, in juice)
1 14.5 oz. can chickpeas, drained and rinsed
2 cloves garlic, minced
1 tbsp. ground cumin
1 tsp. ground coriander
1 tsp. smoked paprika
1 tsp. ground ginger
½ tsp. sea salt
¼ tsp. ground turmeric
¼ tsp. garam masala
¼ tsp. cayenne
Brown rice for serving
Lemon wedges and chopped cilantro for garnish

Heat a medium sized pot over medium heat and add tomatoes. Cook for about 1 minute then add garlic and spices and cook for 3 minutes. Next, add the chickpeas and simmer for about 10 minutes. Remove from heat and serve with brown rice.
