Runner girl fueled by granola!

Ask anyone who knows me and they will tell you that they have at least one running story or one granola story! If they are lucky, they have heard about both! I fell in love with running about two years ago, I ran my first half marathon last year and I’m gearing up for a full marathon.

As a fairly active person it is really important for me to fuel my body in a way that is both enjoyable and nutritious, combining foods that are nutrient dense, that help me hit my macros, and have exciting tastes and flavors. Being healthy does not mean eating cardboard-like food for the rest of your life! One of my favorite ways to fuel myself is by the miracle food that is granola! Simply put, granola is a mixture of a grain, dried fruits,and a sweetener. The beauty of this simple mixture is that it leaves the possibilities for culinary exploration WIDE open (As you’ve probably seen in many supermarkets). I prefer home-made granola, as I can control what ingredients I use and the amount of each ingredient.

Runner Girl’s Granola.

Granola is such a versatile and inexpensive snack or breakfast food and can be incredibly healthy! I love granola-cereal with fruit and yoghurt in the morning for a quick, easy breakfast and as a snack, I enjoy granola clusters or granola bars, perfect for athletes, busy students or… anyone really! Here is a clean, healthy, vegan, no-bake granola recipe that I frequently use: 

NB: I found the original recipe on the food52 website and have been tweaking it over time. 

You will need:

3.5 cups- rolled oats

1 cup- agave nectar (or honey for non-vegans)

2 cups- pumpkin seeds

1-1.5 cups- peanut butter/ sunflower seed butter (or whatever nut butter you like)

1 cup- raisins/ cranberries (or whatever add-ins you like)

NB. Adjust wet ingredient measurements to get your desired consistency.

Put all the dry ingredients in one large mixing bowl

Mix the agave nectar and nut butters (I used half sunflower seed and half peanut butter).

Pour the nut butter mixture into your dry ingredients and mix well until they are well coated and sticky.

Line a shallow baking tray with cling film or baking paper, and then pour the mixture into the tray. Firmly press the mixture down and cover it with cling film.

Place the tray in the refrigerator and leave it in there for four hours, once done, cut it into squares (or shape it however you like) and serve! 

Also, you can add anything into your granola and make it as healthy or unhealthy as you like! 

Oh man guys! My biggest challenge was not eating all of them!
