What happens when you forget to meal prep the night before? You scramble at 5am!

1/2cup dry elbows + ½ cup homemade sauce + ¼ cup black beans for protein… god bless office microwaves… oh..And 1tsp of parmasean cheese from the office refrigerator lmao

It’s about 300-350 cals. Haven’t logged it yet. But I think I eyeballed it ok. But it was good for 5 minutes kitchen scramble lol

Le sigh.. lmao…

I challenge you to try replacing junk food ( potato chips, popcorn, frys, candy, etc ) with these tasty snacks for an entire week!

I promise you will feel so much better and have so much more energy!

Dairy Free Chocolate Pudding

It happens. It’s 4 PM and you’re PMSing hard. You’ve done dynamite all day, have an itch you want to scratch, but don’t want to drop a bomb down a well. It’s OK. This pudding is dairy free, high in iron, high in calcium, and can be sugar-free if you prefer that. It feels and tastes every bit like pudding while being a bit lighter than your store-bought counterpart.

  • 3 TBSP cornstarch (curious to try arrowroot powder)
  • 2 TBSP water
  • 1 ½ cups almond milk
  • 3 TBSP dark cocoa powder
  • ¼ cup sweetener (I used stevia)
  • 1 tsp vanilla extract
  • ½  tsp espresso powder

Directions: Dissolve cornstarch in water. In a large saucepan, combine all the ingredients including the cornstarch slurry and stir frequently until it begins to bubble. Reduce the heat to low and continue stirring until it begins to thicken. Let it cool for a few minutes before transferring to the fridge and letting it cool and thicken more. Split with a friend or keep it all to yourself.

Vegan Breakfast Parfait

Ingredients:

  • ½ cup oats
  • 1 tbsp chia seeds
  • 1 ½ cup non dairy milk
  • 1 ripe mango
  • 1 frozen banana
  • ¼ cup granola of choice

Directions:

  1. Soak oats and chia seeds overnight in the dairy free milk in a medium sized jar (You want the oats to take up half of the jar). 
  2. The next day blend banana with the mango, leaving a few mango cubes left for the topping, then blend until nice and smooth. Pour on top of the overnight oats. 
  3. Top it all off with granola and some mango chunks and enjoy your healthy, filling breakfast!

The best breakfast juice I’ve had in ages! I know I keep saying that lol… it seems like I’m on an amazing juice/smoothie winning streak lately. 😍

Ingredients:

. 2 cups watermelon

. 1 cup frozen raspberries

. 2-3 Tbsp bottled lime juice

. 3 Tbsp ground almonds

. Water

Lentil sweet potato curry with warm naan, lime, coriander and jasmine rice 😊 For the curry I used 1 cup of red lentils, (rinsed beforehand), 1 tsp of ginger, about 2 tbsp of turmeric, dash of chilli powder, 1 tsp paprika, 1 tsp cumin, 1 small diced onion, 2 gloves of crushed garlic, ½ tsp of garam masala, 2 tbsp of lime juice, 1 cup of chickpeas, 1 cup of kale and one cup of diced sweet potato and carrot. I put the lentils, onion, garlic, sweet potato and carrot on first to cook with water and a dash of coconut milk. Good for the earth, good for your health and good for the animals 🌱🌏🐷🐮 Please do what you can when you can

Dinner. SO GOOD!! So hearty and filling. Vegan chili!
Honestly one of the best things I’ve ever made

1 large blended up tomato
Half a cubed tomato
1 small potato
4 Mushrooms
1 Zucchini
2 handfuls of roughly chopped spinach
1 small finely diced onion
2 crushed garlic cloves
Half a can of chic peas

Seasoning:

Salt & Pepper
Garlic powder
Paprika
Cumin
Chilli flakes
