—  The 80/10/10 Diet, Dr. Douglas N. Graham

Fueled by fruit! Don’t ever let anyone tell you fruit contains too much sugar. Because of the abundance of vitamins, minerals and fiber a piece of fruit contains, we absorb the sugars present in fruit differently than the processed, refined sugars in candy, cake, doughnuts, cookies and other sweets. We are designed to fuel ourselves with what the earth naturally provides.

Low fat raw vegan sundried tomato ‘meatballs’

  • ¼ cup sundried tomato
  • 2-3 medium carrots
  • 4 medium brown mushrooms
  • ¼ cup mulberries
  • basil
  • oregano
  • salt free seasoning
  • green onion

Pulse together in food processor until fairly combined and form into balls. These will be a little wet but will form easily. They can be dehydrated or left in oven with door open at lowest temperature aswell just to firm up. They also can be left in the fridge uncovered for a day to dry out a little aswell. I ate them as is and they were fine!

Usually raw vegan 'meatballs’ would be made up of completely nuts and seeds, these are a lighter and easier to digest version with no added overt fats and no lack of flavour!
