🔮Witchy Ways To Celebrate August🔮

  • Decorate your home and altar with symbols of the harvest- apples, berries, and corn. A simple bowl of oats works well for focus and centering. It’s a good time to use both summer and autumn colors and herbs.
  • Bake a loaf of bread using local honey or ingredients if you can, and share it with your loved ones. Leave out some offerings for you harvest deities or the fae.
  • Notice the seasonal changes that are coming by walking in the sunshine and watching out for the changes in the air that herald autumn.
  • Write down your regrets and thanks in your Book of Shadows or journal to record your Lammas journey!

🍞🍞🍞Throwback Toast-day haha 😂

Top is home made beetroot hummus (make as regular and keep adding beetroot until the colour is pretty lol), chopped avocado, lime, plain yoghurt (alpro soy), coriander and mixed seeds

Bottom is peanut butter, plain yoghurt, alpro hazelnut dessert moments, raspberries, banana topped with desiccated coconut and chia seeds.

Both I remember being tasty but the bottom one was my fave.

FYI you can do the swirly pattern by melting the peanut butter first and then using piping bags (if you have them, if not just do what I did and poke a hole in a regular old sandwich bag 😉) like you see every smoothie instagram do 😬

                             Éclairs noisette-chocolat blanc-framboises

Pour 15 éclairs:

► Pour la ganache montée:

Préparation: 10 minutes - Cuisson: 5-7 minutes - Repos: 3 heures

  • 150g de chocolat blanc Valrhona Ivoire 35%
  • 300ml de crème liquide entière 35%
  • 10ml de sirop de glucose ou de miel

Torréfier le chocolat blanc 5-7 minutes à 160°C. Dans une casserole faire bouillir 100g de crème avec le glucose ou le miel, verser la crème chaude sur le chocolat blanc torréfié et mixer avec un mixeur plongeant. Verser le reste de crème liquide froide et mixer de nouveau. Filmer au contact est réserver 3 heures au réfrigérateur. 

► Pour le confit de framboises:

Préparation: 10 minutes - Cuisson: 5 minutes - Repos: 3 heures

  • 225g de purée de framboises
  • 75ml de sirop de glucose
  • 6ml de jus de citron
  • 6g de sucre semoule
  • 6g de pectine NH

Mélanger la pectine avec le sucre. Dans une casserole, faire chauffer le sirop de glucose, y ajouter la purée de framboises, le jus de citron et chauffer le tout à 50°C. Verser le mélange sucre/pectine en pluie en fouettant énergiquement. Donner un bouillon, mixer le tout. Filmer au contact et réserver au réfrigérateur.

► Pour la feuillantine noisette:

Préparation: 15 minutes - Cuisson: 10 minutes - Repos: 2 heures 

  • 20g de noisettes concassées
  • 80g de chocolat au lait Valrhona Jivara 40%
  • 80g de praliné noisette
  • 40g de feuilletine (=crêpes dentelles)

Torréfier les noisettes 10 minutes à 150°C. Faire fondre le chocolat au lait au bain-marie.

Mélanger le praliné avec la feuilletine et les noisettes torréfiées et verser le chocolat au lait fondu, mélanger le tout. 

Étaler sur 4mm d’épaisseur environ entre deux feuilles de papier sulfurisé ou entre deux silpat (encore mieux). Faire prendre au frais. 

► Pour la pâte à choux:

Préparation: 15 minutes - Cuisson: 35-40 minutes

  • 250ml de lait
  • 100g de beurre
  • 1 pincée de sel
  • 150g de farine
  • 4-5 œufs

Préchauffer le four à 160°C. Tamiser la farine. Dans une casserole, porter à ébullition le lait, le sel et le beurre coupé en morceaux. 

Hors du feu, ajouter la farine en une fois et battre énergiquement à la spatule. Remettre la casserole sur le feu et dessécher la pâte pendant 2-3 minutes, jusqu'à ce qu'elle se décolle des parois. 

Débarrasser dans un cul de poule et incorporer les œufs un à un. A partir du 4ème œuf, les incorporer petit à petit jusqu'à ce que la pâte fasse un ruban. 

Garnir une poche à douille lisse (ou cannelée, dans ces cas là, pas besoin de rayer avec la fourchette) de 15mm et sur une plaque allant au four anti-adhésive faire des boudins de 11cm de long.

Passer délicatement le dos d'une fourchette sur les éclairs (pour ne pas que la fourchette ne colle a la pâte à choux, tremper là dans un œuf battu).

Enfourner 35 à 40 minutes, ils doivent être bien dorés. Laisser les éclairs refroidir complément.

► Pour le montage:

Préparation: 15 minutes - Cuisson: 0 minute 

  • 35 framboises fraiches environ
  • feuille d’argent

Découper le haut de vos choux avec un couteau-scie et retire la mie à l’intérieur. 

Récupérer au frais la feuillantine noisette puis détailler des barrettes de 2x10cm environ puis déposer ces barrettes dans le fond de vos éclairs «creusés». 

Garnir une poche à douille avec le confit framboises et pocher un trait (assez épais) de confit sur les barrettes feuillantine noisette.

Sortir la ganache du réfrigérateur, la verser dans la cuve du robot et mixer a grande vitesse jusqu’à obtenir une belle «mousse» (comme une chantilly). Débarrasser et garnir une poche à douille cannelée de 15mm.

Pocher la ganache montée sur le confit de framboises (comme sur la photo). 

Couper vos framboises en deux, disposer 4 demi-framboises sur chaque éclair et terminer par une touche de feuille d’argent.

I have read countless books on the subjects! It was quite in handy~

Bees eat two things: nectar (loaded with sugar, it’s a bee’s main source of energy)
and pollen (which provides proteins and fats).

Choose a variety of plants that flower at different times.
(Rule: native plants attract native bees and exotic plants attract honeybees.)

- Don’t pick human bred flowers, made to be pleasing on the eyes and usually sterile.
-Plant flowers of a single species in clumps about four feet in diameter instead of in scatterings so bees are more likely to find them.
- Bee species all have different tongue lengths,adaptations to different flowers, so a variety of flower shapes will benefit a diversity of bees.

Nut torte!

@princessnijireiki This was my mother’s favored Fancy Cake recipe to make. 

 the 2 tablespoons of flour is really flexible about what you use- my mom used ordinary all-purpose flour, but to make it gluten-free I’ve successfully substituted rice flour or slightly less than 2 tbs of potato starch.  Other alternate flours are probably fine too.  (for those of u who are not allergic to wheat/gluten, matzoh meal also works!  if ur local traditions prohibit baking powder during passover, omit it and increase eggs to 5 and be sure to REALLY whip those whites).  


Preheat oven to 350 degrees

Separate

   4 eggs

Beat the whites until they’re forming stiff peaks, set aside

Beat the yolks with

   ½ cup sugar

and then add and mix gently

   1 cup nut meal (usually I grind my own hazlenuts or pecans, today I used pre-ground almond meal)

  2 tbs rice flour (or one of the other possibilities above!) 

  ½ tsp baking powder

  ¼ tsp salt

Fold in the egg whites, pour batter into 2 8 inch round springform pans (or cake pans lined with wax paper on the bottoms).  Bake 20 minutes. Let cool, spread between the layers 

   jam of your choice (with hazelnuts, I favor raspberry)

 ice cake with 

    about ½ cup melted dark chocolate (eg chocolate chips) 

CHIA PUDDING WITH COCONUT MILK + TOPPINGS

We love using Chia Seeds, as they compliment a dairy free / vegan diet quite well as they are charged with protein, calcium & fibre.  They also contain a decent amount of Zinc, Vitamin B3 (Niacin), Potassium, Vitamin B1 (Thiamine) and Vitamin B2.  Try this Chia pudding recipe and top the bowl with the fresh, seasonal fruit you like! add some nuts for a bit of crunch.

Ingredients:
2 tbs chia seeds
½ cup of coconut milk
topping of choice (we used fig,  physalis fruit, raspberry, hazelnuts, banana and coconut chips. 

Method:
1. In a bowl, add chia seeds and coconut milk and combine well.  Allow to rest for 5 minutes and then stir again until even, place bowl in fridge and allow to set for at least 30min.
2. Remove chia mixture from fridge and stir well so that all chia seeds are distributed evening through the the coconut milk>
3. Top with your favourite seasonal fruits and nuts & enjoy!

flannel - have you ever gone on a bad date?

Guh… yes. Several. One time I went on a date that was legit just a set up for him to try and convert people to Christianity. Like, he was on this dating site (I think it was match) solely for the purpose of finding people who identified as pagan, so he could save their souls. I dumped my iced tea in his lap and left.

quilt - how do you take your tea (or coffee)?

Now that totally depends on the tea. I love chai masala, it’s probably my go to. Liberal cinnamon, cardmon, cloves and ginger, simmered for 20 min. Add to steamed milk with a touch of honey… delightful.

A good maté tea I will drink without any additions. In my lovely handmade  calabaza and bombilla from MrHW.

Coffee, I’m partial to the latte. Steamed milk and a touch of flavoring. Vanilla, hazelnut or raspberry usually.
