Hummus (a transliteration of the Arabic: حمّص) is a Levantine Arab dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. It is a popular food throughout the Middle East and elsewhere.
- 250gr pre-soaked chickpeas
- 2 cloves garlic crushed
- Juice of 1 lemon
- 2 tbsp. Tahini (or minced sesame seeds)
- 1 tsp. sesame oil
- 2-3 tbsp. warm water
- 2 tbsp. olive oil
- Salt and pepper to taste
In a food processor blend chickpeas, garlic, tahini and lemon juice. Add sesame oil, water and olive oil. If you prefer a smoother paste add more olive oil until the desired consistency is obtained.
Serving suggestion: If desired, paprika, cumin or parsley can be added to give th hummus a different kick. Serve this nutritious low-fat dip with warm pita, bread or raw veggies.
