Notes: I felt super weak and lazy and tired all day today, which I’m not sure is due to my ED or the new meds i’m on or both. I didn’t get to celebrate Easter with my dad’s family last week, so we’re doing that tomorrow which I’m anxious about. I’m making a safe food dish to bring over though so if all else fails I can just eat that. I have food challenges set up for myself next week too. Monday through Wednesday, all involving bread. I’m still unsure about whether or not to break my no-gluten rule for the lower calorie bread, but I guess I’ll just decide at the store tomorrow. I’m actually scared for this week because I have food challenges for myself and I also have finals and papers due that I haven’t started but count for a large part of my grade and I’m just stressing myself out way more than I need to. Like why can’t I just say fuck it and go with the lower calorie bread that’s safer??? Like the gluten won’t kill me I can make the exception goddamit. I hate myself.

Veg Spring Roll
Yields 15
Ingredients
Spring roll sheets - 12
Sesame oil - 2 tsp
Garlic - 1 Tbsp (Finely Chopped)
Ginger - 1 Tbsp (Finely Chopped)
Spring onion - 4 (Finely Chopped with White, Green parts separated)
Carrot - 1 large (Julienned)
Green beans - 5 (Cut diagonally)
Red bell pepper - ½ (Julienned)
Cabbage - 2 Cups (Julienned)
Sugar - 1 tsp
Soya sauce - 2 tsp
Ground black pepper - 2 tsp (adjust as per your taste preference)
Salt - ¾ tsp
Oil - For frying
All purpose flour - 1 Tbsp

Healthier Kung Pao Chicken

Ingredients

  • 3 (6-ounce) boneless, skinless chicken breasts, thinly sliced into bite-size pieces
  • Salt and pepper, to taste
  • 2 tablespoons reduced-sodium soy sauce (certified gluten-free if necessary)
  • 1 tablespoon Sriracha
  • 1 tablespoon chili paste (certified gluten-free if necessary)
  • 1 tablespoon honey
  • 2 tablespoons sesame oil, divided
  • 2 tablespoons minced garlic, divided
  • 24 ounces fresh green beans, ends trimmed
  • 1 teaspoon sesame seeds
  • Optional garnish: crushed peanuts or cashews

Directions

Season chicken with salt and pepper. Set aside.

Prep stir-fry sauce by mixing together soy sauce, Sriracha, chili paste and honey in a small bowl. Set aside.

Place 1 tablespoon sesame oil and 1 tablespoon minced garlic in a large skillet or wok on medium-high heat.

Add chicken, and sauté for about 5 minutes. Remove chicken (it will only be partially cooked), and set aside.

Place the remaining tablespoon of sesame oil and garlic in the pan and turn to high heat. Add green beans, and sauté for 5–7 minutes, or until they begin to soften. Add chicken, and continue to cook for 5 more minutes, or until the chicken is cooked all the way through.

Add stir-fry sauce, and reduce heat to medium-low. Cook for a few more minutes, until the sauce has reduced and thickened slightly. Add sesame seeds, and let sit for at least 5 minutes, so the sauce can thicken a bit more. Serve hot.

Garnish with peanuts or cashews as desired.

Sleep lmao I’ve been so busy lately I just want to relax

2. What are your top favorite movies/shows right now?
I just started watching Jessica Jones… haven’t really watched much lately, but I’ve been wanting to start an anime again lately.

3. If you ran into your favorite celebrity, what would you say?
“Oh my god….. I love you…..” lol

4. What are your favorite foods and what was the last thing you ate?
I really like s’mores ha ha ha the last thing I ate was supper. We had ham, spinach mashed potatoes with cheese, green bean casserole, and rice.

5. Have you ever broken a bone before? If so, how?
Actually I never have ha ha

6. What are some of your hobbies/interests?
Writing, writing, writing ha ha ha. I try to make it my priority. I also like drawing and painting, and watching tv shows or movies. I like video games but I don’t play them as much as the rest of my family does. I’m really hooked on Mass Effect Andromeda now. I’m trying to read more, too

7. Do you know what your MBTI type is, if so what is it?
I think I’m INTJ? Or something close to that. It fluctuates, of course.

8. What is your favorite songs right now, and how often do you listen to music?

I listen to music all the time lol when I’m getting ready for work, when I’m driving, when I’m at my computer… even sometimes when I’m sleeping ha ha. The need to listen to music is one of the things that keeps me from reading as much as I should tbh
