MINI CHICKEN AND CHEESE PIES..
These beautiful flaky, buttery, moist pies stole my heart as soon as they peeped out of my oven . They looked like little bright yellow suns. It’s true, they made me go mush.
I have been wanting to try to make these for a while now but never really got to it.

You see , I love baking. Its so versatile and you get a beautiful golden surprise after all that patient waiting most of the time.
These little monkeys were absolutely delightful and gorgeous. I could hear the crisp layers collapse as I took a bite, and I looked like a mess with those tiny morsels of flaky pastry stuck around my lips. Yum.

Anyway, I could go on and on about that moment, but I want you go to have your own. Have fun making these babies , you’ll be surprised how simple it is -

All you need
- 250 gms of filo pastry ( or you can make your own at home )
(For the filling)
- 100 gms chicken salami
- 1 small onion, chopped fine
- 1 tomato ,chopped fine
- 1 small capsicum , chopped fine
- 1 about ¾ cup of good quality grated cheese (which ever one you find tastiest)
- 2 tbsp mayonnaise ( I used ready made)
- 1tsp chilli flakes
- salt and pepper to taste
- 1 egg beaten (add minced garlic and a little but of dried oregano for an extra punch) for the egg wash on top.
- pinch of white or black sesame seeds for crust.
Method -

Since all the filling ingredients are ready to eat , just mix all the ingredients for the filling and keep it aside.

If you are using a cup cake mould like me, Roll out the pastry with a rolling pin making sure that its mostly of equal thickness everywhere.

Now cut out approximately the same size circles as your mould and gently line the moulds after greasing the insides with butter.

Now fill this up with ur filling till about 3/4th of the mould.

Next cut another circle of the same size and place on top like a lid. Smear the top with some egg wash (beaten egg mixed with some minced garlic and dried herbs) and sprinkle sesame seeds on the top.

Bake at 200 degrees for about 30 minutes or till the crusts are golden brown.
