Portabella mushrooms (I usually just eat one or two)
Cheese or cheese substitute (I use Gouda or mozzarella!)
red wine vinegar
salt, pepper, parsley
clove of garlic
whatever toppings you want. chopped veggies and meats are popular
scoop out the gills of the mushroom (use can just sorta pull em out or use a spoon) and broil them, gills down, for 5 minutes. Take em out of the oven, flip the over and pat them with olive oil. Fill with your cheese, close of garlic (chopped), choice of toppings, herbs, and a few drops of red wine vinegar. Stick back in the oven to broil for about 4 more minutes. Maybe less.
I usually serve with Naan but it’s not necessary. Can be eaten with your hands if you want and doesn’t require much clean up or prep. Plus it looks fancy!
