Stuffed Mushrooms

Ingredients:

  • Portabella mushrooms (I usually just eat one or two)
  • Cheese or cheese substitute (I use Gouda or mozzarella!) 
  • red wine vinegar 
  • olive oil
  • salt, pepper, parsley 
  • clove of garlic 
  • breadcrumbs (optional) 
  • whatever toppings you want. chopped veggies and meats are popular

scoop out the gills of the mushroom (use can just sorta pull em out or use a spoon) and broil them, gills down, for 5 minutes. Take em out of the oven, flip the over and pat them with olive oil. Fill with your cheese, close of garlic (chopped), choice of toppings, herbs, and a few drops of red wine vinegar. Stick back in the oven to broil for about 4 more minutes. Maybe less. 

I usually serve with Naan but it’s not necessary. Can be eaten with your hands if you want and doesn’t require much clean up or prep. Plus it looks fancy!
