gluten free sandwich bread

  • Coworker: can you make a gluten free salad with the salad already on hand?
  • Me: no. It wouldn't be gluten free.
  • Coworker: ??? Why can't I just use the salads already on hand for the gluten free order? Why do I have to open a new bag? Salads don't have gluten.
  • Me: Yes, salads have no gluten. However, you just made a sandwich. ..which the bread was not gluten free. You didn't change your gloves. And every time you make a salad after a sandwich, you didn't change your gloves. Gluten is bound to contaminate the salad. That's why it's better safe than sorry. Change your gloves, open a new bag and make a new salad. Even the smallest amount of gluten can cause the patient to have a reaction. It's basic cross contamination. That's why I said you have to change your gloves and grab a new bag.
  • Coworker: I don't believe you. *goes and asks hearing person with 0 knowledge*
  • Hearing Person: ask Elena, she's certified. I'm not. She won't steer you wrong.

Beyond Bread (the Islington branch) started doing a dinner menu! :D Everything we tried was amazing, but especially these sliders and especially the Mexican chicken, guacamole and cheese one. 😍 They also have pizzas on the menu and even have a selection of wines and gluten free beers now. I think the dinner menu is only available on Thursdays, Fridays and Saturdays for now, but definitely go check it out if you can. :)

It may sound odd to some - and I only got around to trying this because I had nothing else in the fridge - but it turns out that grated carrot and extra mature cheddar with a dash of garlic powder, oregano and cayenne makes for such a quick and yummy toastie filling ♥ | feat. gf sourdough bread (newburn bakehouse)

This is a fantastic recipe to throw in your Sunday food-for-the-week prep. It’s literally just 1 chop, toss, and bake. I almost always bake on tin foil to make clean up super easy. For all the ideas for gluten free uses you can ALWAYS sub in gluten free products (I do!).

Here’s a few more specific ideas:

  • Sandwich: toasted gluten free bread, avocado, asparagus, hummus, mixed greens
  • Sandwich: toasted gluten free bread, asparagus, roasted red peppers, pesto, fresh thick sliced tomato, mozzarella
  • Salad: mixed greens, crumbled goat cheese, asparagus, thinly sliced red onion, sunflower seeds, your favorite dressing
  • Salad: arugula, lemon olive oil dressing, gorgonzola, asparagus, cucumbers, chickpeas
  • Pasta: saute garlic, red onion, & cherry tomatoes in 2 Tbsp. olive oil. Toss with pasta, asparagus (chop) and fresh parmesan

There are so many fantastic things you can do with these. I ate the whole bowl on its own for dinner (plus a big stuffed salad) but here’s a few other suggestions!

All of these have a gluten free option, if you’d like to keep it vegan swap or omit the cheese. :)

  • Toss in pasta (or gluten free pasta) and cook a few more minutes. Serve with fresh Parmesan.
  • Load on a toasty sandwich (optional gluten free bread) with a thick slice of fresh mozzarella
  • Toss with quinoa (I like the multicolor type), juice of ½ lemon, and chill (you can also try adding cheese crumbles)
  • Serve over spring mix greens with balsamic vinaigrette
  • Mix with chickpeas, kidney beans, & cannelini beans along with olive oil & lemon juice. Chill and enjoy as a bean salad!

I have to admit- these were so good that by the end of the day I ate the whole thing haha! Hot or cold, these are just plain delicious. They’re really simple to make (you can really make most green veggies thisway!) and use ingredients I always have on hand so it’s a great in-a-pinch, go-to recipe!

Here’s a few ways to use them:

  • my favorite- as is straight out of the pan haha!
  • layered on sandwiches (gluten free bread optional) with hummus & baby spinach
  • tossed in a big salad with light vinaigrette & blue cheese
  • served warm over brown rice or quinoa (especially with baked or grilled salmon)
  • warm on a wrap with fresh mozzarella (optional grilled chicken/ tofu/ tempeh), spinach & fresh tomatoes
  • sauteed with quinoa & parmesan
