Indian Meatballs with Sweet Coconut Curry Sauce 

Flavorful. Amazing. Incredible. Whole30 Compliant! These are spicy, so this is your warning. There was no holding back, but the coconut curry sauce provides the perfect balance. Served with spiraled sweet potato noodles, and this is the perfect meal prep!

Ingredients for Meatballs 

½ lb ground round (or ground beef)

1 egg 

4 cloves garlic, minced 

¼ large yellow onion, minced 

2 large tbsp cilantro, minced 

Seasoning blend: 1 tsp kosher salt, 1 tsp ground black pepper, 1 tsp turmeric, 1 tsp garam masala, ½ tsp fennel seeds, ½ tsp Indian red pepper, ½ tsp tandoori masala, ½ tsp cumin, and ½ tsp cinnamon. 

Ingredients for Coconut Curry Sauce 

¼ large red onion, minced 

3 cloves garlic, minced 

1 tsp tomato paste 

1 tsp curry powder

7 oz tomato sauce 

1 can (14 oz) full fat coconut milk 

1 tbsp cilantro, minced 

½ tbsp arrowroot starch/powder or tapioca powder 

1 ½ tbsp date syrup (softened [pitted] dates pureed with water), more if necessary

Salt and pepper to taste 

Parsley and cilantro for garnish 

Olive oil

Other Ingredients 

Sweet potato noodles 

Directions for Meatballs 

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper and spray with a small bit of nonstick spray. 

In a large bowl, combine all ingredients and mix thoroughly. 

Using a small ice cream scoop or a large tablespoon, form balls – this mixture should make 6-8 meatballs. 

Once the meatballs have formed, place them into the oven and let them bake or 15-18 minutes or until the internal temperature reads 150 degrees Fahrenheit. 

Directions for Sauce 

In a large, deep pan or pot, heat a few tbsp of olive oil over medium heat. 

Add in the onion and the garlic and cook until the onion becomes translucent.

Once the onion has cooked, add in the tomato sauce and the coconut milk. Stir to incorporate. 

Bring the mixture to a simmer and add in the tomato paste and date syrup. 

Toss in the cilantro. 

Reduce the heat and let cook. 

Stir and add in the arrowroot starch to thicken.

Once the meatballs are finished in the oven, place them into the sauce and allow to finish cooking for another 5-7 minutes. 

Taste the sauce and adjust the seasonings and sweetness accordingly. 

Once the meatballs are fully cooked and the sauce has thickened enough to coat the back of a wooden spoon, remove from the heat.

NOTE: sweet potato noodles are best when blanched. Do not eat them raw. 

Garnish and serve.

For the meatballs, use 1 lb ground beef, salt, pepper, garlic powder, parsley, cumin, 1 egg and maybe 2 tablespoons of almond meal and a few shakes of grated Parmesan cheese. Mix it all together, form into 24 meatballs and place in the fridge

For the soup, saute sliced onion, celery, bell pepper and garlic in olive oil. Add ½ teaspoon of cumin, 1 teaspoon of oregano, ½ teaspoon of coriander, a pinch of ground chipotle and tons of salt and pepper. Then add in a 14 oz can of diced tomatoes. I had some homemade chicken stock in the freezer and used about 6 cups worth. Bring everything to a boil and let it simmer for a bit. Gently add in the meatballs one at a time, the soup should be simmering when you do this. I let mine cook for a while to gain extra flavor. Prior to serving, add in some sliced zucchini. Top with shredded cheese and fresh squeezed lime.

Sweet Potato Spaghetti & Meatballs 

can be made vegan or vegetarian without the meatballs 

Ingredients for Meatballs 

1 lb ground turkey 

3 cloves grated garlic

¼ minced yellow onion

1 egg (completely optional) 

Seasoning blend - 1 tsp sweet paprika, 1 tsp granulated onion, 12 tsp ground ginger, 1 tsp ground rosemary, 1 tsp kosher salt, 1 tsp black pepper, and a pinch red pepper flakes

Ingredients for Tomato Sauce 

14 oz crushed tomatoes 

¼ minced yellow onion

1 tbsp Italian seasoning 

Kosher salt and pepper to taste

Few tbsp of olive oil

Parsley or cilantro for garnish 

Spiralized sweet potatoes

Directions 

In a large bowl, combine all of the ingredients for the meatballs together and form into large meatballs – should form 8 large balls or about 12 smaller ones 

Heat a few tbsp of olive oil in a large, deep skillet or cast iron pan. 

When the oil has come to temperature, place the meatballs into the pan and brown on all sides 

Add in the crushed tomatoes and onions and season. 

Submerged the meatballs in the sauce and let simmer for 5-10 minutes, covered with a lid 

Remove the lid, push the meatballs to one side of the pan and add in the spiralized sweet potato – warming it by tossing in the sauce 

Plate, garnish, and serve

BakingWithBooks Does Whole30 - Chicken Meatballs with Zoodles in Butternut Squash Marinara 

Ingredients 

1 lb ground chicken 

1 handful baby spinach, rinsed and dried, finely chopped 

2 cloves garlic, minced 

Seasoning blend: 1 tbsp Italian seasoning, 1 tbsp granulated onion, 1 tsp whole fennel seeds, 1 tsp black pepper, 1-2 tsp kosher salt, pinch red pepper flakes

1 tbsp light olive oil + more for warming zoodles

¼ cup - 1/3 cup butternut squash marinara (from this recipe)

1 zucchini, spiralized using a vegetable spiralizer 

1 roma tomato, optional

Directions 

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or aluminum foil (parchment paper is recommended) 

In a large bowl, combine the ground chicken with all ingredients, seasoning as generously as you’d prefer. 

Form the meat into balls and place on the baking sheet. (you should be able to get 12 medium meatballs or 6-9 larger ones) 

Bake in the oven until the internal temperature of the meatballs registers 150 degrees Fahrenheit 

In a pan, heat the olive oil over medium high heat. Add in the butternut squash marinara. If you find it too thick, allow it to completely warm and adjust the consistency using water. Add in your zoodles and tomatoes and warm through for about 1-2 minutes. 

Once your meatballs are done, toss them in with the marinara and plate your dish.

This make a great meal prep dish (and can be made vegetarian or vegan by omitting the meatballs).

For a change of pace, I decided to cook burgers for Sunday dinner instead of our usual (gluten-free) spaghetti and meatballs. I grilled up some simple sirloin burgers, topped with Muenster cheese, sautéed mushrooms, caramelized onions, and a fried egg, all served over Caesar salad. The pic doesn’t do it justice, but it was seriously deloycious!

Who knew a runny fried egg over a burger was such a revelation?
