Super Delicious Healthy Microwave Nachos

These are filling and pretty “real food” feeling, and it’s like a treat! Most of my spoonie recipes are nice enough, but—mmmmm, nachos.

Ingredients: 

  • Corn Chips (GF if needed)
  • Salsa
  • Refried beans
  • Cheese
  • Sour cream
  • Avocado (optional)
  • Lettuce (optional)

Put the chips on a plate (or bowl, but I like them spread out more for more sauce coverage) and pop on your salsa and cheese. I like to also scoop out dollops of refried beans all over under the cheese layer, but you may prefer to just put a bg scoop on  the side before or after microwaving depending on your preference. 

Microwave for ~2 mins, until the cheese is melted, and serve with a big spoonful of cream and (if using) a handful of lettuce (tastes like a taco yo don’t knock it) and avo.

The cheese and beans are protein, and the cheese, cream and avo are fat and beans and lettuce is veggies. I always keep these ingredients on hand and eat it very often. I actually used to just salsa and cheese (and tons of sriracha) and worked my way up to the fancy version as I became used to it and it got less draining.

HEALTHY PACKED LUNCH RECIPE.

This DIY salad jar is the perfect lunch to bring to work or school!

Ingredients:(makes 2)
2 handfuls of baby spinach
1 small cucumber
1 small carrot
½ cup of cooked back beans or chickpeas
Pinch of herbal salt and pepper
1 tbsp of extra virgin olive oil
Juice of 1 lemon

Method:
1. Finely chop baby spinach
2. Grate cucumber and carrot
3. Cut avocado into cubes
4. Rinse beans or chickpeas
5. Mix in a medium sized bowl.
6. Using reusable jars, combine ½ of the ingredients of the salt, pepper and fresh lemon juice mix well.
7. Top with salad ingredients. Seal the jar and pack your lunch!
8. At lunchtime shake the jar! The dressing will combine with the salad & it will be ready to enjoy!

The freshest summer juice for those hot sunny days ☀️ Watermelon Fresca 🍉
Ingredients :
3 cups watermelon
Juice of 2 oranges
Juice of one lime
2/3 cup water
Handful of ice
Handful of mint leaves
Directions :
Combine all the ingredients in a blender and pulse until thick but smooth. Add a few more ice cubes in the jar before pouring if you want it extra cold 🍉

Topped it with a good layer of justin’s vanilla almond butter, apple banana slices, and blueberry jam

Sweet potato and potato nacho-like dish anyone ? 🙋🙋 Also why had I never tried guac and hummus together ?! 👅 Inspired by the lovely @tessbegg I baked potato and sweet potato wedges, marinated greens in lemon juice, prepared homemade guac and hummus, cut some cucumber and tomato and threw everything together in a pile of goodness 👅
