Tagalong Cookie Cupcakes

Yields 2 dozen

The things you’ll need

  • 1 1/3 cups all purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 1/3 cups granulated sugar
  • 2/3 cup firmly packed light brown sugar
  • 4 large eggs
  • 1/3 cup water
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • ¼ cup vegetable oil
  • ½ cup peanut butter chips
  • 1 cup butter, room temperature
  • 2 cups creamy peanut butter
  • 4 cups powdered sugar, sifted
  • ½ teaspoon salt
  • 2 tablesooons vanilla extract
  • 8 tablespoons heavy cream
  • Large mixing bowl
  • Medium mixing bowl
  • Spatula
  • Hand mixer
  • Whisk
  • Cupcake Tray
  • 24 red silicon cupcake liners
  • Cutting board & knife
  • Tagalong cookies
  • Decorating bag fitted with #809 tip

Let’s get started!

  1. Preheat oven to 325°F.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Whisk in both sugars until evenly combined.
  3. In a medium bowl, whisk together the eggs, water, and vanilla. Whisk in the sour cream and oil.
  4. Make a well in the center of the flour mixture and pour in the sour cream mixture. Stir until well combined (do not over mix).
  5. Gently fold peanut butter chips into the batter.
  6. Line a cupcake tray and fill two-thirds full with batter. Bake for 18 to 20 minutes.
  1. Beat butter until smooth and then mix in peanut butter.
  2. Slowly add powdered sugar and beat until smooth. Scrap down sides as needed.
  3. Add in vanilla and salt and then beat in cream until frosting is smooth and fluffy.

Time to decorate!

  1. Cut each Tagalong cookie in half.
  2. Scoop frosting in decorating bag fitted with a #829 tip.
  3. Once cupcakes are completely cool, pipe two swirls of frosting on top of each.
  4. Top with a half of a Tagalong cookie.

I am here in Beautiful Brooklyn, the 4th largest city in America, after a long car ride yesterday. The highlight of which was the visit to a gas station somewhere in Upstate NY, where I found a group of Girl Scouts. Dear reader, you don’t know how utterly over the moon I was, as in Canada there are only TWO flavors of Girl Guide cookies, one per season, and there is no choice. I bought 12 boxes and, I’m sure, gave the girls a story to tell about the crazy Canadian who was way too excited to see Samoas and Tagalongs.

We also had some classic “crappy Chinese Food” for dinner. “Crappy Chinese” is it’s own type of American, inauthentic, deep-fried-carb and meat heavy Chinese that I love so very much.

Today, we are headed to Central Park before the blizzard comes. Other than that, no hard plans, but I assure you if we run into a major celebrity, say a Stephen Colbert, or foil a bank robbery, as people do in New York City, I I’ll keep you in the loop.

In Episode Two, Daniel and Rachelle are excited to start some work in their new home except that’s the only thing they can agree on. When Rachelle tries to communicate what she wants, Bryan gets caught up in an epic game of stone tag.

“Watch this!” Phil said, storming into Gilbert’s room and shoving her iPad under his nose. “But first have a Girl’s Guide cookie, they’re from my secret stash. Nobody knows about them, not even Blake!”

“Hello to you too Philippa, I’m doing fine. How are you today?” Gilbert answered, smirking at her.

“I’ll be okay when you watch the video!” Phil said, shaking his arm a little bit.

“What video?” Gilbert asked.

Phil’s mouth dropped open. “You mean you really have no idea what I’m talking about?”

“I just got out of the hospital. I haven’t had any access to any devices since the morning of my accident.” Gilbert’s phone buzzed and he sighed. “Hold on a second, I’ve been getting texts and tweets all day.”

Phil nodded, feeling a slight pang of impatience as she leaned over his shoulder to see who had contacted him. “It’s Fred and Diana,” she said.

“I can see that,” Gilbert said.

“What did they say?”

“Have you watched the video yet,” Gilbert read. He looked at Phil. “What video is everybody talking about?”

“Anne’s video, silly! Have you been living under a rock?” Phil replied, rolling her eyes. “I came prepared, it’s all set up for you and ready to go. Just watch it, okay!?”

“Okay!” Gilbert agreed, pressing the play button. 3:53 seconds later he looked at Phil, speechless.

“Well!?” Phil demanded.
