So I make these cookies whenever I’m feeling down, and without fail they always make me feel happy. Plus they just taste delicious! They never last more than a few hours around my house. I actually have this one memorised, it is that easy.
- 2 cups of flour
- 1 cup of sugar
- 2 tsp ginger
- 1 tsp cinnamon
- 1 tsp bicarbonate soda
- 1 tsp golden syrup
- 1 egg
- 125g butter
First, sift all the dry ingredients together into a bowl, then rub in the butter with your fingers, until the mixture is a smooth, crumb consistency.
Next, beat the egg with the golden syrup and add to the bowl, stirring through with a spoon to form a dough.
Then, using a small spoon, form small balls of dough and press them onto a greased baking tray. Bake the cookies for 10-15 minutes at 150 degrees Celsius, and you’re done!!
I tend to play songs that make me feel happy while I’m using my hands to mix the dough, and channel good energy from my hands to the dough to make them magical cookies, but they also work just fine as delicious gingernuts!
