"Sketti 'n Meatballs"

The wife and I are proud fans of “Here Comes Honey Boo Boo”, and now that the season is over, I had a hankerin’ for some paleo “Sketti”.  (But not their version with ketchup and butter, I don’t think I’m ready for all that glitz on my plate.)

So we made Spaghetti Squash and Meatballs. Didn’t really follow a recipe but it came out delicious. Here’s what I think we did:

Spaghetti Squash ‘Sketti’ :

 1 spaghetti squash, cut in half, seeded
coconut oil
salt & pepper 

1. Preheat oven to 350
2. Rub some coconut oil on squash, and season with salt & pepper
3. Place in baking dish,  flesh side down
4. Cook for 45 minutes, or till soft
5. Scrape out noodley flesh with fork
(Bonus: Sautee 'noodles’ in olive oil with spinach)


1lb of ground beef
½ onion
½ cup chopped parsley
salt & pepper
ghee or coconut oil 

1. Mix all ingredients 
2. Form golf-ball-sized balls
3. Heat pan on medium, coat with ghee/oil
4. Cook meatballs till desired doneness, approximately  7mins
