I’m actually quite happy to have just dried my very first “print on demand”, ordered by a photographer of the great tumblr community. Many thanks to you, Florian, I’m happy to send you the result in the very next time.

Though my prints (at least some of them) can be ordered in my society6 shop, a handmade and unique darkroom print still remains something different and special, even for me. I don’t use fibre-based paper often, and it’s still a bit of a challenge for me - but if I should happen to sell a darkroom print, it will get the best treatment, like in this case being printed onto Adox Fine Print Variotone Baryta and it will be signed and dated.

Vegan (almost) No-Carb Keto No-Bake Coconut Cheesecake (<2g carbs per slice)

Nutritional Values (per slice): 352 calories: 35g Fat, 5g Protein, 2g Carbs (1g Fibre, 1g Sugar)

Ingredients:

Base: 260g Almond Grounds, 40g Coconut Desiccated, 100g Erythritol (Sukrin), 200g Coconut Oil

Top: 270g Creamed Coconut, 1L Almond Milk Unsweetened, 10g Agar Flakes, 100g Erythritol (Truvia), 35g Desiccated Coconut (sprinkle on top)

Instructions:

  1. Melt the Coconut Oil for the base in the microwave (1 minute should suffice) and then in a bowl mix with Ground Almonds, Desiccated Coconut and Sweetener untill well blended. Then pour in a spring pan and leave in the fridge for about an hour until it properly solidifies.
  2. Meanwhile, in a pot on medium heat, put the creamed coconut and the almond milk and keep mixing until they dissolve together. At that point add the sweetener and repeat, while stirring. least but not last, ass the Agar and from this moment on NEVER STOP STIRRING for about 10 minutes. Then turn the heat off and let cool.
  3. When it has cooled down enough pour in the springpan ontop of the base and place in the fridge for at least 6/8 hours (always better overnight)
  4. Before serving, sprinkle remaining desiccated coconut on top.
  5. Enjoy!


I was challenged to make a Vegan-Friendly keto dessert, and here it is! Agar works as gelatin basically, just without the calories and incidentally without the animal origin so works better for every reason.

Seemed like a good comeback recipe to bring back this blog to what this is supposed to be rather than personal issues or troll management. Sorry for the distractions ;)
