What are some yummy and healthy ideas for vegan meals?


Soup and bread with avocado and salt and peppers smashed on top.

Soups are so easy, yummy, and nutritious and with leftovers I add the soup to a frying pan, heat and a little and throw in some ready to wok noodles and some more veggies to create a noodle soup/stir-fry thing

Here is one I’ve been making recently and love, but there are so many other soups out there, you’re only a google away

My Spicy Rice: basically fry off garlic and onion, add any other veg you like (i use red pepper, mushrooms, broccoli, spinach, peas and sweetcorn) add in cooked rice (i like brown for this recipe) and lots of soy sauce, some sweetener (maple syrup, agave, coconut sugar whatever) and spices (i use curry powder, pepper, salt, paprika, onion powder, garlic powder) really good served with sweet potato fries, avocado and hummus or wrapped up in a burrito

Pasta, a staple really, can be eaten cold, easily brought as a packed lunch and it’s so versatile. Here is an amazing dish, check out the rest of her recipes too

Salad bowls just fill up a bowl with rice/quinoa/couscous, sweet potato fries, greens, veggies, avocado, hummus, beans. Here is some inspiration

Sandwiches and wraps just throw salad, veggie burgers/falafels vegan meats and veggies and hummus between bread lol
