The flowers and fruit of Citrus australasica, the Australian Finger Lime. This fruit is sometimes called “citrus caviar” because of how the flesh looks and accumulates in a manner similar to fish eggs. The commercial potential of this extremely tasty, vitamin packed “bush food” is just beginning to be tapped, but I’m sure the drought-resistance of C. australasica will make it a favorite of farmers and home gardeners throughout Mediterranean climates across the globe.
