I love spending time in the kitchen. I love to try new
dinner recipes and discover some easy snacks to get me through the day. I
especially love to bake. Does that make me an expert? Nope. I don’t have a lot
of time to set aside and actually do elaborate recipes. I like to find easy
recipes; the easier, the quicker, the better. Also, I can get lazy. Don’t judge
I’ve loved seeing Elizabeth share some yummy recipes with us
(That carrot cupcake recipe?! YUM!) and
I’ve been meaning to try some of them out for a while. The problem is: Time. I
have none, sadly. Also, sometimes I don’t have the necessary cooking/baking
But! I came across the perfect one recently and have been
meaning to try it for a while. BIRD Bakery has some gluten-free brownies that
look to die for and I couldn’t resist the chocolate cravings inside me. Best of
all, it didn’t look too elaborate.
Some of you might have seen my live updates on how it was
going, via those darn Instagram stories. Here’s the full showdown for you.
The recipe is just a quick Google search away and seems to
be very popular. For me, I had come across it via Pinterest (and if you’re judging
me, get a Pinterest and see what all the fuss is about, you’re welcome) and it
had reminded me of what I’d been wanting to write about for this lovely blog. I
got to it the very next day and was happy to see that my Pinterest high hadn’t
conned me into thinking it was easier than it actually was. Note: This has
The gluten-free portion of the recipe isn’t really that
important to me; BIRD Bakery uses a specific flour that’s locally sold, after
many requests from customers for gluten-free choices, and I personally will eat
everything except some seafood at this point. So I did tweak the recipe in order to use regular flour and they still
turned out great. I did stick to everything else religiously, however, and felt
pretty darn awesome doing so. I am a master whisker and my favorite part about
anything cooking/baking related is mixing stuff together, and I was happy to
see the results, even though my Instagram story said otherwise. It took a
little more time than I had originally thought it would because of certain instructions
that I’ll share in a second, but overall nothing too bad. Worth the struggle!
I wasn’t able to take any pictures of my personal
achievement because there were children present and those brownies disappeared
so quickly that I wondered if I’d dreamt the whole thing. I guess I’m a chocolate
Anyway, here’s the recipe, for all those curious and wanting
to try something new!
Unsalted butter: 1¼
sugar: 1½ cups
chips: 1⅔ cups
Almond flour: 2⅓ cups
Eggs: 8, yolk and
Baking powder: 1¼
Powdered sugar or
chocolate ganache: for garnish
almond: 1, for garnish
Step 1: Preheat oven to 300° with rack in center
position. Generously butter a 9x13 inch baking dish.
Step 2: In a double boiler, melt the chocolate and then
remove from heat. In a large bowl, cream together butter and half of the sugar,
slowly adding in the egg yolks. Once well incorporated, add flour and baking
Step 3: Place remaining sugar and eggs in the bowl of
an electric mixer fitted with the whisk attachment and beat on medium
speed—about 4 minutes—until stiff peaks form.
Step 4: Slowly add the melted chocolate to the large
bowl. Fold in the egg-white mixture until all of the ingredients are well
incorporated, then pour batter into pan.
Step 5: Bake for 60 minutes at 300°. Rotate halfway
through, bringing temperature down to 275°. Bake until center is firm, being careful
not to crisp the edges.
Step 6: Let cool slightly in pan, about 15 minutes.
Lift brownies out of pan and let cool completely on a wire rack before cutting.
Step 7: Drizzle with chocolate ganache or dust with
powdered sugar and garnish with one blanched, sliced almond.
(PS, I totally forgot to garnish with the almond but you better
believe it was Powdered Sugar City up on those brownies)
Happy baking! 10/10 for this recipe, E. Would bake again.
Here’s a silly one. Rank Katie’s roles in terms of hawtness (@rtracker).
Alrighty. This killed me, because personally, I would just choose them all. Can’t I just have them all??? It was almost as difficult as having to decide which character I would date (a high point in my life), so thanks for that! But first I had to consider my criteria for Maximum Hawtness™. It was necessary. I mean we all know Katie is gorgeous and hot af no matter what. So instead I had to consider things beyond Katie’s perfect face.
Sooo personal style, attitude, the way she carries herself, innocence vs. …naughtiness? Sauciness? Can that be a thing? Sure! Oh, and chemistry and interactions with other characters. That’s a big one. Leaving out the usual characters. So here is my list.
1. Kate Foster (But of course!)
Pretty sure a lot of you have seen me freak out about Kate. When it comes to judging hawtness, I am all for the sharp and pointy. When did the question of wanting fries cause anyone to become uncomfortably aroused?? When Kate Foster asked the question, that’s when! Kate is smooth, seductive and she spends pretty much her entire date with Erica looking like she is ready to rip her clothes of with her teeth. …Yeah that’s pretty hot. Bonus points for the lingering touches and the sex hair the morning after. #shooketh
2. Lena Luthor
The perfect combination of sharp and pointy and soft and squishy. There is definitely something about her that has drawn so many in. The heart-eyes, the perfect buns, the eyebrows, the lip-bite, the red lipstick… Then there is the fact that she dresses like she’s on her way to view the next big line during fashion week (That Magenta Coat™ tho). Speaking of the lip biting, heart-eyes, and eyebrows, is it me or is Lena more flirty than pretty much all of Katie’s characters combined? Throw all of that on top of the fact that she is an angel and classy af and you can just consider me deceased.
Pssst. If you are for any reason interested in more of Katie being hot and/or my somewhat warranted opinion/endless thirst, keep reading! Ok let’s move on.

Because heteronormativity is ugly and you headcanon Gloria as a wlw what are your headcanons for Katie's characters sexualities?
Hey anon! Firstly, I will say that while I am definitely against the
notion of heteronormativity and all that it implies, I am not against
heterosexuality. I feel like there is some belief that it is written
somewhere that being for or against the two are mutually inclusive and
in my opinion, that is not the case.
I don’t really have long explanations for all of Katie’s
characters regarding their sexuality so I figured I would just list the
headcanons I do have. There are some that I hadn’t thought of prior to
this question so I kind of sat here amusing myself thinking about them.
Lena Luthor: wlw (Lesbian or Bisexual)
Definitely wlw. How can she not be? Specifically, I’ve considered her
as a lesbian. Though with the introduction of Jack, that kind of threw a
wrench in things. I only say kind of because A) We don’t know the
extent of their previous relationship and B) There are plenty of
lesbians, myself included, that have dated men in the past. However, I
definitely won’t dismiss the idea of her being bisexual which I can
totally get behind as well.
Morgana Pendragon: Asexual
often consider her sexuality because, it is never stated, or implied and she didn’t have any love interests.
I know some headcanon her as straight, shipping her with Merlin or even Arthur. Some say gay because of
Gwen and Morgause, and the fact that she often used men as pawns and had
no interest in them. I once entertained the idea of her being asexual and just kind of stuck with it. I really like the idea.
For a while in our marriage, it was pretty tight,“ he says. "And we liked that. We like living sort of hand-to-mouth. It makes you appreciate the time when you don’t have to live like that. We didn’t want to go to my parents and tuck our tails between our legs and be like, ‘Can you help us?’ We wanted to be our own adults. […] There was once another Hammer, by the name of MC, who spent all of his money really quickly, and I would like to avoid that.
I saw that some imagine blogs did this so I decided to do it as well. Some characters are placed under two categories just because it depends on their mood/situation. Part two will be posted in a few days
The “Early Birds” Squad
The “Morning Zombies” Squad
The “Laughs-After-Hearing-a-Pun” Squad
The “Groans-After-Hearing-a-Pun” Squad
Bard (if he wasn’t the one making the pun)
The “Was-Probably-the-Person-Making-the-Pun” Squad
What song would you use to describe each Katie character and which one would you use to describe them all? - (anon)
This turned out to be a bit more difficult than I anticipated. I’m so picky when it comes to music and I wanted to consider legitimate reasons as to why these songs remind me of each character. For those interested, I did create a playlist on Spotify. You know your girl is extra af so it was necessary. Here we go!
Lena Luthor: Rise by Katy Perry
I won’t just survive Oh, you will see me thrive Can’t write my story I’m beyond the archetype
I’m sorry but if those four sentences don’t describe Lena, tell me what does! Lena has survived so much and she keeps fighting every day. She knows that even though she is a Luthor by blood, she can rise beyond the dark reputation that comes with the name. There are people out there that doubt her because of her last name and there are others that seek to make her fail but she refuses to give them that satisfaction. It works!
Gloria Miller: Beast by Nico Vega
Stand tall for the people of America. Stand tall for the man next door. We are free in the land of America. We ain’t goin’ down like this! Come on now!
Sharing time: This is one of my favorite songs. Okay, I mostly just imagine a montage of Gloria kicking serious ass while this song plays (Someone wanna make that?). It’s loud and full of action and a bit of anger but mostly it just sends a message to stand up and fight for your country and for those that can’t fight for themselves. Be a hero. Be a Gloria!
