Unicorn Cake


Yields one three layer 6 inch cake

The things you’ll need

Ingredients
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 stick salted butter at room temperature
  • ¼ cup solid vegetable shortening
  • 1 ½ cups sugar
  • 2 teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 5 large white eggs
  • ¾ cup whole milk
  • ¼ cup rainbow sprinkles
Decoration
  • White buttercream frosting
  • Light pink buttercream frosting fitted with #824 and a #4B tip
  • Light blue buttercream frosting fitted with a #2A tip
  • Light purple buttercream frosting fitted with a #824
  • Dark purple buttercream frosting fitted with a #2A tip and a #4B tip
  • Black buttercream frosting fitted with a #4 tip
  • White fondant
  • Gold edible highlighter dust

Let’s get started!

  1. Preheat oven to 350°F.
  2. Grease and line three 6-inch round cake pans.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, use an electric mixer to beat butter, shortening and sugar until light and fluffy.
  5. Add eggs whites one at a time, beating well after each addition. Add extracts.
  6. On a low speed, alternate adding the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Fold sprinkles into the batter.
  7. Divide batter evenly between cake pans and bake for 30 to 35 minutes.
  8. Once cakes are fully cooled, level them with a cake leveler.
  9. Stack cakes on a cake board, making sure to frost between each layer.
  10. Use a cake turntable to smooth white frosting over the entire cake.

Time to decorate!

  1. Use white fondant to make a unicorn horn.
  2. Mix a few drops of almond extract into edible gold dust and then brush it onto the horn.
  3. Use teardrop cutters to create fondant ears and then paint the inner ear gold. Insert a toothpick into the bottom of each ear.
  4. Pipe rosettes on the top and along one side of the cake using the pink and light purple frosting and #824 tips.
  5. Add dollops of detail using the pink and dark purple frosting and #4B tips. Use blue and dark purple frosting fitted with #2A tips to add more details.
  6. Pipe eyes onto the front center of the cake. Place horn on the top center of the cake and the ears on either side of the horn.
  7. TaDa! This colorful Unicorn Cake will bring magic to any occasion!

CAMBODIA. Phnom Penh. 1996. Tuol Sleng prison, now a museum. Photos of inmates executed by the Khmer Rouge. 

The infamous Tuol Sleng prison, aka Security Prison 21 (S-21), was one of at least 150 execution centres in the country used by the Khmer Rouge regime when in power (1975-1979). Between 17,000 and about 20,000 people were imprisoned there; there are only seven known survivors.

Prisoners at Tuol Sleng were systematically tortured to obtain confessions of whatever crimes their captors desired. Routine torture methods included beatings, electric shocks, searing of hot metal instruments, hanging, lacerations with knives, suffocation with plastic bags, pulling out of fingernails while pouring alcohol on the wounds, and waterboarding. The “medical unit” at Tuol Sleng also performed medical experiments on some prisoners; test subjects would be sliced open and their organs would be removed with no anaesthetic; others would be attached to intravenous pumps drained of every drop of blood to see how long they could survive. Flaying was reserved to the most difficult prisoners. After captors were satisfied with the confessions obtained, prisoners would usually be transported to Choeung Ek, one of the most infamous killing fields of the Khmer Rouge, and killed there using crude weapons like iron bars or machetes, before being buried in mass graves. 

Nowadays, Tuol Sleng is a museum open to the public. Buildings have been preserved as they were left when the Khmer Rouge were driven out in 1979 and extensive records are available since the regime made efforts to document its activities. Several rooms are lined, floor to ceiling, with black and white photographs of some of the estimated 17,000 prisoners who passed through the prison.

Yields 16 cupcakes

The things you’ll need

Ingredients
  • 4 ounces light cream cheese
  • ¼ cup Greek yogurt
  • 2 tablespoons butter, softened
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • Pinch kosher salt
  • 4 cups powdered sugar
  • 1 ¾ cups whole wheat flour
  • 1 cup coconut sugar
  • ½ cup honey
  • 2 teaspoons cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • ¾ cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 cups shredded organic carrots
  • Green & orange royal icing in decorating bags fitted with #5 tips
Frosting
  • 4 ounces light cream cheese
  • ¼ cup Greek yogurt
  • 2 tablespoons butter, softened
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • Pinch kosher salt
  • 4 cups powdered sugar
Equipment
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Rubber spatula
  • Liquid measuring cup
  • Cupcake pan & liners
  • Hand grater
  • Small cutting mat & knife
  • Peeler

Let’s get started!

  1. Preheat oven to 350°F.
  2. n a large bowl, combine flour, coconut sugar, cinnamon, nutmeg, baking powder, baking soda and salt.
  3. In a medium bowl, mix together butter, eggs, honey and vanilla extract.
  4. Mix the wet ingredients into the dry.
  5. Gently fold carrots into the batter.
  6. Scoop batter into cupcake liners and bake for 18 minutes. Allow cupcakes to cool before decorating.
Frosting
  1. Combine all of the frosting ingredients (except powdered sugar) in a large bowl and beat well with an electric mixer.
  2. Beat in half of the powdered sugar and scrape down the sides of the bowl. Add the second half and then beat and scrape again.
  3. Scoop frosting into a decorating bag fitted with a #2A tip.

Time to decorate!

  1. Frost the tops of the cupcakes and then refrigerate for about 5 minutes.
  2. Use green royal icing to pipe a carrot stem.
  3. With orange icing, pipe a carrot shape below the stem.

Lavender Cupcakes with Honey Frosting

Cupcakes:

  • ½ cup (1 stick) butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • about ½ tsp. red and ½ tsp. blue food coloring
  • 1 ½ cups all-purpose flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 2 ½ Tbsp. dried lavender buds
  • ⅔ cup cold milk


Frosting:

  • ½ cup (1 stick) unsalted butter, softened
  • 8 oz. cream cheese, softened
  • 4 cups powdered sugar
  • 2 tsp. vanilla extract
  • 2 Tbsp. honey, plus a little extra for drizzle

  1. Preheat oven to 350 degrees F. Line muffin tins with cupcake liners.
  2. In the bowl of an electric mixer, cream the softened butter and sugar together. Add the eggs one at a time, beating after each egg. Stir in the vanilla and food coloring.
  3. In a separate bowl, stir together the flour, baking powder, and salt. Chop the dried lavender buds into fine, small pieces. Stir into the flour mixture.
  4. Add the flour mixture to the butter mixture. Stir in the milk.
  5. Scoop batter evenly into lined muffin tins. Bake for 18-24 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Let cupcakes cool in the tins for about 5 minutes, then remove to a wire rack to cool completely.
  6. In the large bowl of an electric mixer, beat the butter and cream cheese together. Add the powdered sugar 1 cup at a time, mixing on low, until the frosting is smooth and creamy. Beat in the vanilla extract and honey.
  7. Scoop frosting into a piping bag fitted with a 1M tip. To create the flower, begin in the center of the cupcake’s surface, and slowly swirl in wider circles. (It might be helpful to practice on a piece of parchment paper first, then you can just add the frosting back to the bowl.) You can also simply spread the cream cheese frosting over the top of the cupcakes with a knife.
  8. Lightly drizzle a little honey on top of the frosting. Enjoy!
