Rice Noodle style "Ramen"

I do this for myself when I fancy wagamamas but can’t afford it :) Alsooo very easy to make for one person (actually easier but yeah)

Ingredients for one serving:

  • ½ an onion sliced long
  • 1 nice sausage (I used a sage an apple one)
  • 1 handful mange tu peas
  • 1 egg
  • 50g dried rice noodles
  • ½ a stoc cube of choice (I used beef)
  • chillie sauce to personal preferance
  • 7 leaves of sage (around, personal preferance again)

Directions:

  1. Add a small amount of oil to a pan, add the sliced onion. Take the saugsage meat out of the casing, divide into around 6 small ball shape and add to pan.
  2. Boil 300ml of water in a small pot with the stock cube, chillie sauce and some torn sage leaves. Whisk the egg in saucer and slowly pour into the stock pot, slowly stir until the egg mixture has risen to the top. Add mange tu too (ahah), I like to keep them quite chunchy but just warmed through.
  3. Put rice dry rice noodles into a large bowl and pour stock pot over them (they will cook in 4ish mins so they’ll cook while you wait for it to cool) and the onion and sausage mix, tear the rest of the sage over and sprinkle a few chillie flakes over.
