Salmon Paste Bites Topped w/ Poached Quail Egg

This is definitely one of my favorite appetizers that I’ve made. I experimented with a few different ingredients and the result was very satisfying. The poached quail eggs did take me a few practices, but as long as you know the technique of a normal poached egg, you can catch on very quickly!

Salmon Paste -

  • 2 cup chopped smoked salmon
  • 1 cup cream cheese
  • 1 tsp lime/lemon juice
  • ¼ cup finely chopped onions
  • 1 tbsp finely chopped dill (I love the taste of dill, but if you don’t reduce this to ½ tbsp)
  • 2 tsp Worcestershire sauce
  • 2 tsp mustard
  • salt to taste

Poached Quail Eggs -

  • 8 quail eggs

  • 1 small baguette
  • salt & pepper
  • ¼ cup green onions

Salmon Paste -

1. Mix everything thoroughly in a large bowl and refrigerate for about 30 minutes.

Poached Quail Eggs -

(these will need to be poached in batches of 2-3)

1. Crack 3 quail eggs gently into a bowl.

2. Prepare a small pot of boiling water. Once the water boils, bring heat down to medium.

3. Get a spoon ready (or a very very small sieve)

4. Gently pour the eggs into the water and stir the water slowly (in 1 direction) for about 20 seconds

5. Let the eggs cook for about 20 more seconds, then gently spoon them out into a bowl.

6. Repeat for the rest of the eggs.

1. Slice the baguette into 1/3 inches.

2. Toast the sliced baguettes in the oven or a toaster for 2 minutes at 340'C

3. (optional: you can spread a bit of margarine onto the baguette slices)

4. Assemble with a spoonful of salmon paste, then a poached quail egg, topped with green onions and salt & pepper to taste!

I’ve prepared few posts in advance, when I was still pregnant with Mia and I could spend days in a kitchen. I didn’t, but I could have. Oh because I’m not pregnant anymore. Mia is with us. She was born on 6th December and we named her Mia Sydney. And I know that one day it will catch me and bite me as she’ll celebrate her birthday on St Nicolas day (big in Poland) and she’s named after a city.

I am not going to describe here how it went except for mentioning that it was fairly easy and fast. I came to my hospital at 8:30 and at 16:30 I was back home with a child. 6 days has passed and I must admit that my life has changed. I still have delicious breakfasts thanks to amazing Tomasz, I still enjoy my days and time, now with Mia. But I love another person and this is crazy amazing. When they gave her to me in a hospital I was like “well, ok, she’s red and looks like an old person”. Then I fall asleep for few hours and Tomasz was the one holding her on his naked chest all this time. We went back home and I was tired and that was pretty much all I’ve felt. But within the next few days I fell in love with this small creature with such an intensity that I kept observing her at night as I was afraid that she’ll stop breathing. I think it’s all because her magical smell - my baby smells like heaven. And now I kiss her 1.000.000 times per day and it’s not enough. Yep, I kissed a girl and I liked it!
