Two slices of whole wheat bread, one put in the toaster oven briefly to melt the vegan cheese, 3 pieces of Trader Joe’s vegan chicken, a pickle, hummus, ketchup, and vegan buffalo sauce (from a local restaurant)….. really helps satisfy my buffalo chicken craving :)
OMG this is so easy, just put in the leftover grilled or baked vegetables and brush them over with sweet chilly sauce and the sandwich is done! Here I’ve got some zucchini, sweet potato slices, and a bit of fresh capsicum. Recommend to put in some grated carrots for some extra crunch though!
This is a super easy, vegan sandwich filler/cracker spread that I make all the time. I think it’s similar to tuna or egg salad.
All you need is: 1 can of chickpeas (garbanzo beans), 2 tablespoons each of veganaise and mustard, and chopped pickles & dill if you want.
Method: open the can of chickpeas and drain. Using a fork, smash as much of the peas as you can, then pour into a bowl. Add veganaise/mustard and pickles&dill and continue mashing until there are very few whole beans left. After that, toast your bread and slather it in chickpea smash salad. I like to eat this with spinach and sliced tomatoes on warm toast as a snack.
