Vegan Breakfast Parfait

Ingredients:

  • ½ cup oats
  • 1 tbsp chia seeds
  • 1 ½ cup non dairy milk
  • 1 ripe mango
  • 1 frozen banana
  • ¼ cup granola of choice

Directions:

  1. Soak oats and chia seeds overnight in the dairy free milk in a medium sized jar (You want the oats to take up half of the jar). 
  2. The next day blend banana with the mango, leaving a few mango cubes left for the topping, then blend until nice and smooth. Pour on top of the overnight oats. 
  3. Top it all off with granola and some mango chunks and enjoy your healthy, filling breakfast!

energy balls º ♡ º 

:: walnuts + dates + oats + raw cacao powder + sunflower seeds + chia seeds + maple syrup + coconut oil + cinnamon + himalayan salt :: 

one of these lil balls fills me up with so much nourishing goodness & immediately my cravings for chocolate or sugar simply fade away… they are raw vegan :) just blend it altogether & roll them into balls! in joy! ~*~

Recipe
Frozen cherries
Frozen raspberries
Frozen pineapple
Frozen bananas
*Couple dates if you like it sweet
*A lemon if you like it tart

* I like smoothies sweet and tart so I always add the last two ingredients. As for liquid I always use water. Occasional I’ll use a dash of soy milk but that’s in addition to the water.

Of course it is hilarious conceptually that someone might eat 10 pounds of lettuce in one sitting for dinner (and funny to see someone eat that much lettuce) so I get why people find that raw vegan video funny but also a lot of people have no idea what lengths women will go to to avoid confronting their disordered relationships to food and yes, that includes “I’m just vegan and this is easy and raw” so idk. Anytime you see someone, especially women, beginning to restrict their dietary choices, it is best to not bother them unless you are genuinely worried but you should keep an eye out. This is especially true given I know very few women who either don’t have disordered relationships to food or never did in the past.

Quinoa Fruit Salad (5-6)

1 cup uncooked quinoa
2 cups water
2 tbsp lime juice
3 tbsp honey
5 cups assorted fruit of your choice

Bring quinoa and water to a boil, then cover and let simmer 15 minutes.

In a separate bowl, whisk lime juice and honey together to create dressing. 

Combine fruit with dressing. 

Stir in quinoa.

Let chill before serving.

(This makes such a good breakfast! Whole, real foods will leave you energized throughout the day.)

VEGAN STRAWBERRY-BROWNIES
(HCLF-approved)

Mix:
1/5 cups whole-wheat-flour
½ cup sugar
¾ cup applesauce
4 Tbs carob powder
4 Tbs cacao powder
1 tsp baking powder
¾ cup water
1 tsp vanilla extract

Spread it out on a baking tray and throw some frozen or fresh strawberries on there!
Bake at 350F (180C) for 25-30min.
Sprinkle some chocolate onto them.
Enjoy with a cup of tea.
