Fluffy Banana Lemon Pancakes
1 Cup Flour
2 Cups Oat Flour (grind rolled oats in blender)
1 tsp baking powder
1 Tbl Flaxseed
1 Tbl Lemon Zest
1 tsp Vanilla extract
1 Lrg Banana
1 Tbl Pure Maple Syrup (plus more for topping if desired)
2 Cups Water (or your favorite milk)
Coconut Oil for Pan
Earth Balance Butter Substitute or Real Butter if you prefer
Vanilla Greek Yogurt
Fruit of your liking
Put dry ingredients into bowl.
Place Banana, 2 Eggs, Vanilla, Maple Syrup, and Water or Milk into blender and blend.
Pour liquid blended mixture into dry ingredients, add lemon Zest and stir together until mixed.
Pour ¼ Cup Pancake batter into Coconut Oiled hot pan.
Turn when pancake bubbles and cook for another minute or so.
Pour Warm Maple Syrup with Butter over and ENJOY!!
***My two toddlers LOVE these. I either make them extra tiny for them; pour tablespoons of batter onto pan -OR- cut them up into strips and have them dip their “French Fry Pancakes!” into a little bowl of warmed butter with maple syrup mixture. They stuff themselves silly and get tons of protein and whole grains to start off their day.
