easy pancake recipes

Day 6. Okay so remember what I said I would post everything (no matter how un aesthetically pleasing) haha well here is the food for day six 😅😅😅 (I also omitted the water as it felt unnecessary but for those interested there was 4 bottles today)

So while this isn’t the most nutritious day it also involves one of my all time, ride or die favourite foods. To say I’m obsessed with kimchi pancakes (kimchijeon) would be a massive understatement haha.

Fluffy vegan Pancakes


  • 1 cup of flour
  • 2 tbsp sugar
  • 3 tsp baking powder
  • 1 tsp baking soda
  • a pinch of salt
  • 1 cup non dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegan butter
  • ¼ cup apple sauce
  • 2 tbsp melted coconut oil
  • ¼ cup chickpea brine


  • Coco whip
  • Maple syrup

  • Fruit of your choice


  1. Combine the milk with the vinegar and set aside
  2. Sift the dry ingredients into a large bowl. You want the dough to be lumpy when making pancakes, but you don’t want the starting base to be lumpy.
  3. Melt your butter and combine with the apple sauce and sugar. With an electric hand mixer mix the brine until it’s stiff and fluffy.
  4. Pour your milk and butter mixture into the peaked brine and lightly mix together. 
  5. Pour your wet ingredients into the bowl with the dry ingredients and fold them together. Do not over mix! Your batter should be a little lumpy. Then set aside in the fridge for 10 minutes. 
  6. After 10 minutes heat a large frying pan with some vegan butter. Take about 2 tbsp worth of batter and just drop it on your pan. Fry until little bubbles start forming then flip the pancake on the other side. 
  7. Once you’re finished you can top you pancakes with whatever you want. I used maple syrup and coco whip and some raspberries. Have fun!

Three ingredients only! Protein pancakes.

• ½ cup of coconut/oat flour
• 2 egg whites
• a little bit of oil (to fry)

Simply mix the flour and egg whites, let it stand for 5 minutes (optional, you can cook straight away) and fry in oil. Or, maybe, bake it in the oven for 5-10 minutes at 180C? This allows you to avoid adding oil!
This makes a single serving of light, yet filling food. Choose any topping you like: berries, cinnamon, butter, honey… Anyway, it’s low in calories and gluten free! Plus! Dairy free, wheat free, sugar free, vegetarian, paleo… Just perfect.

Creamy Tomato Italian Chicken

A wonderful slow cooker Italian chicken recipe, with mushrooms, spinach in a creamy tomato sauce.



4 boneless, skinless chicken breasts, cubed

3 cups sliced mushrooms

1 (6 ounce) package spinach

2 cans diced tomatoes, with juices
8 ounce light cream cheese, cubed
1 (6 ounce) can tomato paste

½ teaspoon garlic powder

½ teaspoon dried oregano

½ teaspoon dried basil

½ teaspoon parsley flakes
Salt and ground pepper, to taste



In a slow cooker, place the sliced mushrooms into the bottom.

Place spinach on top of mushrooms.

Season the chicken breast with salt and pepper, then place on top of spinach.

Add cubed cream cheese on top of chicken.

In a bowl, mix together tomatoes, tomato paste, salt, pepper, oregano, basil, and garlic powder.

Pour tomato mixture over the chicken.

Cover and cook on low for 6-8 hours or on high for 4 hours.

Serves: 4-6


Sweet Potato Pancakes

Yields 14 four-inch pancakes

The things you’ll need

  • 1 cup leftover sweet potato casserole
  • ½ cup Greek yogurt
  • ¾ cup milk
  • 2 eggs
  • 4 teaspoons honey
  • 4 tablespoons butter, melted
  • 1 cup all purpose flour
  • ¾ teaspoon baking powder
  • ¼ teaspoons baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Rubber spatula
  • Electric griddle
  • Metal spatula
  • ¼ cup measuring cup
  • Serving plate

Let’s get started!

  1. In a medium bowl, whisk together sweet potatoes, yogurt, milk, eggs, honey and melted butter until well combined.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and spices. Combine wet and dry ingredients.
  3. Turn electric griddle to 300ºF and lightly oil the surface. Scoop ¼ cup of batter onto the griddle and smooth it out to a four-inch round. Cook until little bubbles start to form, about 1 ½ minutes.
  4. Carefully flip with a metal spatula and cook the other side until golden brown, another minute or so.

Everybody loves pancakes! Right? You just gotta. These are fluffy, pillowy, delicious and you can serve them up with just about anything!

  • 2 eggs
  • 256 g. flour
  • 2 tbsp. sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 474 ml. buttermilk
  • 4 tbsp. melted butter
  • ½ tsp. vanilla extract

Whisk together buttermilk, butter, vanilla extract and eggs. Add the dry ingredients and mix until the batter is thick and smooth. I use a tablespoon’s worth of batter for making these, but you can make them as small or as big as you like. The trick is to flip them when you see the batter becoming bubbly on the pan, depending on how much colour you want on them, of course. Enjoy!


Here’s my easy fluffy pancake recipe :

Ingredients :

  • 1 cup flour
  • 1 & ¼ cup plant-based milk
  • 2 Tablespoons lemon juice
  • 2 tablespoon maple syrup or 2/3 cup sugar
  • 1 teaspoon vanilla extract and/or cinnamon(optional)
  • ¼ teaspoon baking soda
  • 2 teaspoons baking powder (optional but makes fluffier)


In a bowl, combine the milk with lemon juice and set aside. In a large bowl mix the flour, sugar, baking powder and baking soda.

Now add in the soy milk mixture and vanilla extra. Stir until incorporated.

Heat a large nonstick pan over medium heat and pour batter into the pan.

Cook until the edges dry out slightly and little bubbles start forming on the surface (2-3 minutes)Flip and cook for an additional minute or two (until this side is lightly brown.)

Serve still warm and go crazy with toppings ! I like frozen berries, maple syrup, chocolate chips, banana slices, poppyseeds, peanut butter…
