Homemade chicken nuggets and instead of breadcrumbs I used a mixture of almond flour and grated parmesan. Then I pan fried them in a little bit of olive oil.

Meals like this make me love my low carb diet so much.

I also made a dipping sauce out of mayo, ketchup, onion powder, garlic powder, and extra black pepper.

I’m so satisfied. I ate the whole damn thing.

Tacos have been a staple in my life lately so I made a version for fall :
Ingredients :
3 taco shells
½ fresh pumpkin
½ head of purple cabbage
½ head cabbage
1 cup shredded lettuce
1 lime
Pumpkin spice seasoning and Tajin to taste
Directions :
Preheat oven to 450°F
Scoop out the pumpkin seeds, give them a quick rinse and mix them in a bowl with ½ teaspoon pumpkin spice
Cut the pumpkin into medium sized chunks. Sprinkle with pumpkin spice and pepper.
Roast for 30-35min until tender.
In a separate tray place the seeds coated in pumpkin spice and roast until golden (7-15min depending on the size)
In the meantime shred or cut thin stripes of purple cabbage and cabbage.
Massage the lettuce in lime juice
Reheat the taco shells and once the pumpkin is done assemble the tacos. Season to taste 🌶

Self care snack… Chocolate Chia Pudding

4 servings, about 1.25 cups in 1 serving!


- 1/3 cup (63g) of Chia Seeds

- 4 tbsp cocoa powder

- 1 tsp vanilla extract

- 3 tbsp Vitafiber (or use plain corn syrup or maple syrup)

- 1.5 cups unsweetened almond milk

- 1 stevia packet

Mix by hand in a bowl for 5-10 minutes until cocoa is blended into the cold almond milk. It should start to thicken a little as your stir, as the chia is already starting to expand. Put in refrigerator for 3-4 hours. Better if made the night before.

Macros for 1 serving: 84 cals, 15.4 C, 3.7 F, 1.7 P, 67.6 Na, 118.2 K, 12.9 Fiber

Happy Tuesday everyone! Don’t we all love a super simple snack that is quick to throw together? Here’s my go to- cheese chips!

Step 1: Get some ultra thin sliced cheese. It can be any kind you like but I always go for cheddar. Also preheat oven to 325!
Step 2: Cut each slice into four squares and place onto parchment paper.
Step 3: Bake for 15-ish minutes, depending on how well done you like them.
Step 4: Let chips cool and then serve with something to dip them in!

Breakfast Muffins

New fall recipe for you guys ! Oatmeal is so warming and creamy that even if it’s still 88°F in South California I cant resist !Pumpkin Oatmeal 🎃🍁 Ingredients :

1 cup rolled oats
1 ¾ cup plant based milk
2/3 cup pumpkin puree
1 teaspoon cinnamon
1 heaped teaspoon pumpkin spice mix (I used Trader Joe’s)
½ teaspoon vanilla extract
¼ teaspoon ginger
Toppings : Raw almond butter from @maranathanutbutters , warm blueberries and sliced banana

Direction :
Combine all the ingredients in a saucepan over medium heat. Bring to a low boil and then reduce heat to let simmer. Stir regularly until a creamy and thick consistency is achieved which takes about 5min. Pour in a bowl and serve warm with desired toppings.
