Majarete, or corn pudding, is a traditional dessert in Dominican Republic. The silky sweetness makes it one of our most beloved desserts, perfect for a sweet treat any time of the year.

6 cobs of husked, fresh sweet corn

1 cup of sugar

2 tablespoons of cornstarch

½ teaspoon ground cinnamon

4 cups of whole milk

½ cup of water

A pinch of salt

5 Cinnamon sticks

A pinch of grated cinnamon or nutmeg (optional)

Remove the corn kernels from the husks, and blend with the sugar, cornstarch, cinnamon powder, milk, salt and water. Strain the mixture and keep the liquid, discard solids. Pour into big pot, add a pinch of salt and the cinnamon sticks. Cook over medium heat stirring constantly to avoid sticking. When it thickens to the consistency of custard, remove from the heat. Pour into small bowls and sprinkle with grated cinnamon. Cool to room temperature and serve cold or chilled.
