I’m baaaaaack! From New York haha. Nick and I took a little early spring vacation to New York this month. It’s a pretty cool city, not gonna lie. There are several attractions, restaurants, bars, and I’m sure nightlife. (I adjusted to the time change either very quickly or not at all, and I got very sleepy very early in the days we were there).
Because I was on vacation I allowed myself to eat those delicious and carb-o-licious food items that are so pinnacle to NYC’s reputation. For example, Nathan’s Hot Dogs, genuine New York Italian food, chicken and waffles, and tasting/sampling New York beer.
But as delicious as the food was, I just found myself in such a mental haze while I was there. It really feels like a completely different world. The people there are quick, determined, impatient. I would most likely NOT do well in a city like New York, which is why I’m glad I visited. It just reaffirmed the feeling I always had of not thriving in a place like NYC lolol.
Anyways! I’m back and feel the most committed and excited about being on a ketogenic diet than ever. Last night Nick and I went grocery shopping, and I spent a large part of the afternoon/evening meal prepping so we can have some meals to take to work with us.
The first picture isn’t even like, half of what we got at the store. Pretty sure half our grocery load was 50 veggies/50 animal protein/byproducts.
Today I meal prepped as much as I could! I made (mostly double the servings) chicken avocado salad, shrimp and caper salad served in romaine cups, and chicken with mushrooms and cream sauce (a lá Julia child!! - that’s what the second picture is)
I still have yet to make some mashed cauliflower and keto friendly fries. Apparently rutabaga is a GREAT substitute for potatoes if you’re missing fries, which I TOTALLY am. I rediscovered my love for fries and mayo in New York, so I’m hoping this rutabaga recipe turns out well.
Anyways, I love my boyfriend, I love my roommates, I love my friends, I love my family, I love cooking, I love ketosis, I love reading and literature. I’ve decided to invest as much as my free time into a new project. (Update later).
