dating as a vegan

I can’t wait to get to know everything about you
From the way you like your coffee to the smell of your room
And I can’t wait for the day I get to wake up in your arms
It will be a dream come true and I’ve felt this from the start

You could be the one
The one I’m meant to be with
You could be the one
The one person that I love
My soulmate? I think so
A kindred spirit? Of course
There’s not a single thing I’ve felt I have to force

I know it might sound crazy cause it’s a big, big world
But of all the people I think it’s supposed to be you and me
I believe I was meant to find you right when I did
And together we’ll live happily with our pets as kids
Eating vegan food for date night and watching movies in bed
As we smile at each other and say, “you’re my best friend.”

And I know it’s only been a couple months or so
But everything inside me is telling me to go with these feelings I have
I let them expand

I see you in everything I do
I wish we were together
But I know we will be soon
And we’ve got a list of things to do
And not a single moment will be boring with you

You give me so much butterflies
Sometimes I think I leave the ground
On cloud nine whenever you’re around
Or we’re talking or snapping or anything
You just always have that affect on me
I see you in my dreams
You’re the first thought when I awake
Thinking, “what are they up to in surgery today?”

I’m somehow not even afraid to fall in love with you
Because it feels so right and like it’s what I’m meant to do
Just a few more months and we can cuddle and kiss
Just a few more months til absolute bliss.

I’m not sure why the concept of vegans only wanting to date other vegans if they can help it is shocking to non-vegans. It’s almost like people have always had preferences for finding other people who share the same core beliefs of morality (and treatment of others) as they do. It’s really not a new concept. Just as I can’t seriously dating someone who treats other humans disrespectfully I can’t seriously date someone who treats other animals disrespectfully.

Little throwback to this weekend date night when I indulged in this epic vegan burger 🍔 with fries 🍟 and heaps of mustard 💥 I eat super clean 90% of the time and workout on a daily basis but that doesn’t mean I totally banned vegan junk food from my diet, it’s all about balance. While I do feel best and manage to keep on the leaner side with unprocessed, healthy, wholesome foods, I am a fan of fries, burgers, cakes and ice-creams. Especially since I’m moving to LA in a couple of months and will get a taste of America’s best vegan decadence 😋

Matcha Date Pops 🍡

Maybe you’ve picked up on this but I have a very strong sweet tooth. 🐭 I grew up eating lots and lots of candy bars. Most people don’t believe me when I say that but it’s so true. So I always make sure to keep something sweetly homemade available to me. I love dates mostly because they are so sweet and if appropriate I they will always be my first sweetener of choice. And when they are ground up they offer a nice chewy consistency that resembles a candy bar. Lol. And since I’m on a matcha kick I thought I make some matcha candy balls.

Matcha Date Pops

Makes 8 pops

7 pitted Medjool dates, or 1 cup dates

½ cup shredded unsweetened coconut

2 tbsp. matcha powder

1 tbsp. raw cacao nibs

2 tbsp. raw cacao powder

1 ½ tbsp. coconut oil

In a high-speed blender or food processor pulse the dates, coconut, matcha powder and cacao nibs until crumbly and sticky. Mold into balls (I use a cookie dough scoop) and place on a baking sheet lined with parchment paper. Refrigerate while you make the chocolate.

In a double-broiler or a by placing a ceramic bowl over a small pot of simmering water (making sure the water doesn’t touch the bowl) place the coconut oil and stir until melted. Add cacao powder and whisk until combined. Remove bowl from heat.

Dip each date pop into the bowl of chocolate until coated. Using a fork, transfer coated date pops back to baking sheet and refrigerate for 15-30 minutes. Insert cake pop sticks into each date pop for easing eating.
