I recently made some really really really good mac & cheese. I used a lot of cheese so it was amazing. I didn’t really do anything special, I cooked the noodles (I like mine very al dente) and poured them in the casserole dish and added the cheese. I used Daiya - A bag of cheddar, the container of cream cheese, 2 slices of swiss, and 2  slices of provolone, very cheesy. Then I baked it for a while. I’ve gotten tons of meals out of it and still have some in the fridge.

Vegan Buffalo Chicken Sandwich

Two slices of whole wheat bread, one put in the toaster oven briefly to melt the vegan cheese, 3 pieces of Trader Joe’s vegan chicken, a pickle, hummus, ketchup, and vegan buffalo sauce (from a local restaurant)….. really helps satisfy my buffalo chicken craving :)

NACHOS

The Collegiate Vegan turned three today!! And what’s a better way to celebrate three years of blogging than with a giant platter of nachos for dinner? I went a little (a lot) overboard tonight, so this recipe is plenty to serve 4-6 people.

You’ll need:

  • 1 bag of tortilla chips, any kind
  • ½ can of black beans (rinsed and drained)
  • ¾ cup of corn (fresh or frozen)
  • 2 tomatoes, chopped
  • 1 jalapeno, seeded and diced
  • 1 bag daiya pepperjack style shreds
  • 3-4 leaves of romaine lettuce, shredded
  • salsa (I used peach mango)
  • avocado or guacamole

What you’ll do:

Spread the tortilla chips out on a cookie sheet and top with the pepperjack shreds, tomato, black beans, jalapenos and corn. Bake at 400 for 10-15 minutes. Remove from oven and top with shredded lettuce, salsa and guacamole. Then have yourself a party.

Deep Dish Pizza with Cheese-Filled Crust

If you love pizza, if you are one of those people who can eat pizza all-day every-day, and if you believe that pizza is the best food ever invented, then this is for you!

I make pizza every week for my family, but today I wanted to take my pizza to the next level.  Pizza is so easy to experiment with.  The list of toppings is endless, an array of cheeses and sauces. Then there is the thickness of the crust…

When I pulled this pizza out of the oven even I was amazed!

Ingredients:

4 ½ cups organic non-bleached all-purpose flour

2 cups warm water

4 ½ teaspoons yeast

1 teaspoon sea salt 

2 cups Daiya mozzerala cheese

1 ½ cups for the crust and ½ cup for the topping

½ cup chili sauce (Organicville)

Assorted toppings

Method:

In the bowl of your stand mixer, add yeast and warm water; let sit 5 minutes.

Add 2 cups flour and salt and mix on medium speed for 1 minutes.  Add remaining 2 ½ cups flour.  Continue mixing for 3 minutes.  The dough should come clean from the bowl while mixing; you can add more flour if needed 2 tablespoon at a time. Cover the bowl with a clean kitchen towel and let rise 1 hour. Lighlty butter a cast iron skillet.  Remove the dough from the bowl and place in skillet.  Using your hands spread out the dough while also pushing the dough up the sides.

Place the cheese around the edges.  Fold over the edges while at the same time pulling the dough back up the sides.

Spread out the sauce; add cheese and your toppings.

Bacon-Wrapped Mac and Cheese

Vegan Pizza 🍕
Whole grain crust*
½ cup marinara sauce
¾ cup Daiya mozzarella cheese
arugula
spinach
fresh basil
sliced tomatoes

*Im super excited because this upcoming semester I start into my baking portion of culinary art school and I’m hoping I’ll be able to learn how to make a good pizza crust (maybe even GF) to share with you guys!

Made these cupcakes last night at midnight for a vegan potluck 🎃 Pumpkin spice cupcakes with cinnamon “cream cheese” frosting. Dusted with cinnamon sugar.

Cupcakes:
1 ¾ cups all purpose flour
1 ¼ cups sugar
¼ cup coconut sugar
1 tablespoon baking powder
1 teaspoon cinnamon
2 teaspoons pumpkin spice
(Or ½ tsp nutmeg & ginger, ¼ tsp allspice & cloves)
1 ¼ cup pureed pumpkin (fresh or from a can)
1 1/8 cup coconut milk (cream)
½ cup cashew milk
½ cup vegetable oil

Bake at 350 for ~18 minutes. Should be springy to the touch and a toothpick inserted should come out clean. (Allow to cool completely before icing)

Frosting:
½ cup vegan butter
¼ cup vegetable shortening
1 cup Daiya cream cheese
2 teaspoons of cinnamon
4 cups icing sugar (more or less depending on how sweet you like it)

I made a call to my local Papa John’s and asked if it would be okay if I bought in a dairy-free cheese to put on my pizza, and the manager said yes!

So, here is one extra large pizza with jalapeños, pineapple, tomatoes, onions, green peppers, and Daiya cheese!
