dairy free mayo

Vegan Tempeh Reuben 

I’ve never actually had a real reuben, but I had this sandwich at a vegan restaurant and it was life changing!!! Here’s my attempt to recreate it :)

Ingredients:
-sour dough bread
-tempeh
-sauerkraut
-¼ cup vegan mayo
-2 tbsp ketchup
-2 tbsp relish (or a couple of slices of dill pickles cut up)
-garlic salt and/or regular salt
-vegan cheese

Directions:
-Toast sour dough bread slices
-Make thousand island dressing: mix mayo, ketchup, relish, and salt
-Slice tempeh in half to make it thinner, then (optionally) toast or saute to crisp it up a little
-Spread dressing on toast slices, then put on the tempeh, sauerkraut, and vegan cheese, and put the sandwich open face in the toaster oven or regular oven to melt the cheese.
