Potato croquettes, or korokke, are delicious fried balls of mashed potato and mince! It’s a great little meal to take for lunch or eat for dinner!

Hi there! Mako Mankanshoku here and I’m going to show you how to make my mom’s delicious and mysterious croquettes! I hope you’re ready, cause here’s what you’ll need!

  • 5 large potatoes
  • 3 large coloured peppers
  • 1 small onion
  • 1 teaspoon of minced garlic
  • 1 teaspoon of minced cilantro 
  • 5 white mushrooms (or more!)
  • 1 tablespoon of corn flour, plus more to coat the croquettes
  • Salt and pepper, to taste!
  • Vegetable oil, for frying
  • A frying pan!

Alrighty then, let’s get started!

First you’re going to want to peel your potatoes, and then put them in some boiling water, for about, say, 30 minutes! 

Next, dice your peppers! 



Next, do the same with your little onion!

Now unless you want crunchy onions in your croquettes, you should probably cook them a little. Mom calls it “sweating” the onions but that sounds super gross, so just let them cook in a small pan with a little bit of oil until they get kind of see through and somewhat brown, for about 10/15 minutes on medium, like so!

They smell really good at this point, but we’ve got more to do. Next, wash and cut your cilantro, mushrooms and garlic. If you don’t have fresh garlic, you can cheat like me and use the kind that comes in a jar (/。\)

By now, your potatoes should have boiled. To check, stick a fork in the biggest one, and if it easily goes through to the middle, it’s done! (๑>ᴗ<๑) Next you want to mash them, using a potato masher, a meat mallet, a pastry cutter or your hands! 

But…uh…just a quick thing, if you’re using your hands, be careful, it’s really really hot…

A-anyway! Now that all your ingredients are prepped, add them all into the bowl with the mashed potatoes, as well as the tablespoon of corn flour, and the salt and pepper!

Next you’re going to want to mix it ALLL up. You can use a spoon or something but I find using your hands works a lot better! Just try not to burn yourself…

Then after everything’s all mixed, you’re going to shape the croquettes!

 \(^▽^)/ Take a small handful of the mixture and knead it together to form a flat-ish pancake..croquette…hash brown…thing! (Mine weren’t quite as flat as they should be…whoops.)

They sure look mysterious….next you’re going to put these all on some parchment or wax paper, and stick them in the fridge for about 20 minutes, or until they’re slightly hardened and only a bit warm.

Once it’s been that long, grab your frying pan and put the heat up to medium high. Meanwhile, start rolling your croquettes in corn starch. You could alternatively roll them in bread crumbs as well!

Once the frying pan is hot even, add enough vegetable oil to barely fill the bottom of the pan. Then, add a few croquettes in. They should immediately start sizzling! Watch for flying drops of oil.

After a few minutes, probably like…two or three, use a spatula to check if the other side has browned. If so, flip them and let the other side cook!

Mmmm! They’re starting to smell really good! Once the other side has also browned, take the croquettes out of the frying pan and put them on a paper towel, to get rid of all the extra oil (and to wait for them to cool ლ(´﹏`ლ) )

YUMMMM! Now finish with the rest of the croquettes, remembering to add more oil if it doesn’t sizzle enough.
