Mid Eastern Lamb Kabob Dinner by Donna

A visit to the Middle Eastern store was so overdue for my husband and myself.

Kabobs

2 lbs fresh ground lamb (halal)

2 Tablespoons garam marsala powder

2 teaspoons salt and same amt. pepper to taste

2 teaspoons cumin ground

2 teaspoons ground ginger or 2 T. fresh ground ginger paste

4 teaspoons ground garlic of fresh garlic paste

2 Tablespoons lemon juice

2 to 3 Tablespoons Macedonian made Vegetable Spread*

called Jadranka - Ajvar Hot…not really hot at all though..

¼ cut up parsley or celanthro finely chopped

4 spelt bread slices moistened with water til mushy

2 Tablespoons oil for frying or on foil place on grill

Mix well and let sit at least 20 minutes or 1 hour. Form in to linklike shapes

(kabobs in Mid East are not round but Indian style is).

Grill til brown or no blood shows coming through and set aside.

Salad:

3 to 4 cucumbers washed and peeled & diced

4 romano tomatoes or medium tomatoes diced

1 medium onion peeled and diced

1 bundle of parsley washed and finely choped

1/3 cup vinegar

1/3 cup olive oil

salt and pepper to taste

Mix the vegetables andall ingredients for the salad together and chill.

Buy olives to your liking to decor or have chilled and on sides with or in wrap.

Tamarindo sauce;

Take tamarinod paste, add water and 1to 2 teaspoon sugar, sprinkle cayenne pepper lightly or to your taste, 2 to 3 T. tomato gluten free/corn free ketchup and make like a slightly thick soup an add a pinch of salt so you have sweet, salty, hot and sour. Set aside and chill.

Hummus:

Take organic can of garbanzo beans, 2 T. olive oil, salt and pepper to taste, 1 to 2 T. lemon juice and 1 to 2 cloves of peeled garlic or 2 to 3 t. garlic powder. Blend with some water little by little and sort of a paste. Put in another container to chill and set aside.

Tahini…comes already made and add water if too thick and mix gently til paste like. Set aside.

Have optional ground pomegranate to sprinkle on the grilled meat.

Naan is overbread comes in large or regular to heat by coating with olive oil on grill and do last. You can use slices of spelt (read labels to choose the brand without dairy or eggs) breads instead with olive oil brushed lightly on these instead and grill til warm not crispy for wraps/sandwiches.

Create a wrap or sandwich with the lamb, salad and sauces.

Buy for dessert: Baklava (optional not gluten free), halwa, or halva (sesame candy), Turkish coffee with cardamon.

Another dessert option is having dried whole dates, apricots and exotic fruits like pomegranate peeled and seedes separated! Mix together.

Dairy Free Mango Lassi Shake…my version is get dairy free almond or soy or hemp milk, crushed ice, some soy vanilla and take the mango pulp in a can with kesar…this is usually not with hi fructose corn syrup but read labels. Kesar means saffron flavored. Blend til shake add sugar to taste and water if too thick or utilize honey as a sweetner or agave syrup or maple.. Enjoy!

*the Jadranka is useful as a sandwich spread or as a condiment as well for veggies if you get tired of hummus or the egg/soyfree “Nayonaise.”
