Red Velvet Cheesecake Cupcakes

Makes 12

INGREDIENTS
1 box red velvet cake mix, prepared according to package instructions
16 ounces cream cheese
1 cup powdered sugar
2 teaspoons vanilla extract
2 cups cream cheese frosting

PREPARATION
Preheat oven to 375° F
In a large bowl, prepare the red velvet cake batter. In a separate bowl, combine cream cheese, powdered sugar, and vanilla, stirring until there are no lumps.
Divide the batter evenly among a lined muffin tin, filling halfway. Spoon some of the cream cheese mixture onto the batter. Top with remaining batter, filling until about ¾ of the way up. Bake for 20 minutes, then cool.
Pipe the cream cheese frosting onto each cupcake, then top with red velvet crumbs.

Chocolate-Covered Strawberry Cupcakes
Makes 12

INGREDIENTS
1 box white cake mix, prepared according to package instructions
20 strawberries
1 cup chocolate chips
2 cups vanilla frosting

PREPARATION
Preheat oven to 375° F
In a large bowl, prepare the cake batter. Divide the batter evenly among a lined muffin tin, filling halfway.

Finely chop 8 of the strawberries and spoon them evenly on top of the batter. Top with remaining batter, filling until about ¾ of the way up. Bake for 20 minutes, then cool.

In a small bowl, microwave the chocolate chips in 20 second intervals, stirring in between, until the chocolate is melted and smooth. Dip the strawberries in the chocolate, then chill.
Pipe the frosting onto each cupcake, then top with a chocolate-covered strawberry.

Cookie Dough Cupcakes

1 box vanilla cake mix, prepared according to package instructions
1 8-ounce tube chocolate chip cookie dough
1 cup chocolate chips
2 cups cream cheese frosting

PREPARATION
Preheat oven to 375° F.

In a large bowl, prepare the cake batter. Divide the batter evenly among a lined muffin tin, filling halfway.

Place a small ball of cookie dough on each, then top with remaining batter, filling until about ¾ of the way up. Bake for 20 minutes, then cool.

Pipe the frosting onto each cupcake, then top with chocolate chips.

Chocolate Peanut Butter Cupcakes
Makes 12

INGREDIENTS
1 box chocolate cake mix, prepared according to package instructions
18 chocolate peanut butter cups
1 cup vanilla frosting
¾ cup peanut butter

PREPARATION
Preheat oven to 375° F.
In a large bowl, prepare the cake batter. Divide the batter evenly among a lined muffin tin, filling halfway.

Place a peanut butter cup in each, then top with remaining batter, filling until about ¾ of the way up. Bake for 20 minutes, then cool.

In a separate bowl, combine peanut butter and vanilla frosting, stirring until smooth. Then halve the remaining peanut butter cups.

Pipe the frosting onto each cupcake, then top with the peanut butter cup halves.

Cookie Dough Cupcakes

Cookie Dough

  • 2 cups flour
  • ¾ teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 ½ cups mini chocolate chips

Cupcakes

  • 2 eggs + 1 egg white
  • 1 cup whole milk
  • 2 ¼ teaspoons pure vanilla extract
  • 3 cups cake flour, sifted
  • 1 ¾ cups sugar
  • 1 tablespoon + 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 12 tablespoons unsalted butter, room temperature
  • ½ cup sprinkles

Buttercream

  • 2 cups unsalted butter, room temperature
  • 4 oz. cream cheese, softened
  • 2 lbs. powdered sugar  
  • 1 Tablespoon vanilla extract
  • 1 ½ Tablespoons Milk
  • Pink food coloring
  • ½ cup sprinkles for decorating

Directions

For the cookie dough:

  1. In a mixer, combine butter and sugars until light and fluffy.
  2. Add vanilla extract.
  3. Add flour and salt. Mix until combined.
  4. Stir in mini chocolate chips and sprinkles.
  5. Make thirty cookie dough balls (about 15 grams each) and put in the freezer for at least 3 hours. Use the remaining dough to make another thirty balls and set aside.

For the cupcakes:

  1. Preheat oven to 350 degrees. Line cupcake pan with cupcake liners then spray each one with non-stick cooking spray.
  2. In a medium bowl combine egg whites, eggs and the vanilla. Set aside.
  3. In a bowl with an electric mixer fitted with a paddle attachment, combine dry ingredients and mix on a low speed for 30 seconds.
  4. Add butter and milk. Mix on a low speed until just combined. Increase to medium speed and mix for 1-2 minutes.
  5. Scrape down the sides of the bowl and add egg mixture in 2 separate batches. Beat on medium speed until it is just combined.
  6. Stir in sprinkles.
  7. Using a medium ice cream scoop, scoop batter into cupcake liners.  
  8. Place frozen ball of cookie dough in the center of the cupcake.
  9. Bake for 18-20 minutes, or until wooden toothpick comes out clean.
  10. Place on a cooling rack to cool.

For the buttercream:

  1. In a stand mixer fitted with a paddle attachment, beat butter and cream cheese together until light and fluffy.
  2. Slowly add powdered sugar. Mix until combined and fluffy.
  3. Add vanilla, milk and a few drops of food coloring. Mix until combined.

Assembly

  1. Put buttercream in a piping bag fitted with a large star tip.
  2. Pipe buttercream in a swirl on top of the cupcake.
  3. Add sprinkles and cookie dough ball on top.

  • But today… he was pooped after a long day of sick puppies
  • “MC~, honey, I’m so tired. How about when I get off I pick up pizza?”
  • “Are you sure? I can just cook and dinner can be ready by the time you get off”
  • “No, it’s fine really. It’s been so long since I’ve had pizza anyways. I use to eat it all the time in my college days, but I’ve grown since then. Haven’t I, honey? Do you think I’ve become more manly?”
  • “Of course, Yoosung. You’re the man of my dreams… And pepperoni is the pizza of my dreams. So don’t be too long!”
  • He laughed on the other end of the phone. “Alright, I’ll be home as soon as I can”
  • Once Yoosung got home, he had the pizza but.. It was cold -_-

  • His father forced a project on him that took up a lot of his time

  • A maid helped you set up the table and a top notch chef came to cook for you both so that when Jumin got home everything would be ready.
  • You wore a fitting red dress and black heels
  • You’re hair loosely curled
  • As you were patiently sitting at the table, sipping wine, you heard the door click.
  • You saw the black tuff of Jumin’s hair and you stood up to greet him, taking off his jacket and planting a kiss on his lips.

Fudge Brownie Cupcakes with Cookie Dough Frosting

yield: 12 CUPCAKES

Ingredients:
Brownie Cupcakes

4 ounces unsweetened or bittersweet chocolate, chopped (I used Ghirardelli)
½ cup (115g) unsalted butter, cut into cubes
1 and ¼ cups (250g) granulated sugar
1 teaspoon vanilla extract
3 large eggs
¾ cup (94g) all-purpose flour
¼ teaspoon salt

Cookie Dough Frosting

½ cup (115g) unsalted butter, softened to room temp
¾ cup (150g) packed light brown sugar
1 tsp vanilla extract
1 cup + 2 Tablespoons (140g) all-purpose flour
½ teaspoon salt
¼ cup (60ml) milk (I used vanilla almond milk, but soy or regular would be fine)
1 cup (180g) mini chocolate chips

Directions:

Preheat oven to 325F degrees. Line 12 muffin tins with baking cups or spray with nonstick spray. Set aside.
Melt the chopped chocolate and sliced butter together in the microwave in 30 second increments, stirring after each until completely smooth and combined. Allow to cool for a few minutes. Stir in sugar, then vanilla. Add in eggs, 1 at a time, mixing well after each addition. Mix in the flour and salt.
Pour batter into 12 muffin tins and bake for 20-23 minutes. Mine took 22 minutes. A toothpick inserted in the center will have moist crumbs. Be careful not to overbake the cupcakes.
For the frosting: While the cupcakes are cooling in the pan, make the frosting. With an electric or stand mixer fitted with a paddle attachment, cream together the butter and sugar at medium speed. Add the vanilla and beat well. Stir in the flour and salt until doughy. Stir in the milk and beat until fluffy. Gently fold in chocolate chips. Frost cooled cupcakes.

Additional Notes:

*I find these cupcakes are best served cold. I kept mine in the fridge. It also helped to avoid the cookie dough frosting from melting.

*You could easily use boxed brownie mix as a shortcut, but you would need to adjust the frosting accordingly since the cookie dough frosting recipe below only makes enough for 10-12 cupcakes.Fudge brownie cupcakes with cookie dough frosting
