If you like iced coffee and you’re not cold brewing it, you’re doing it wrong. Cold brewed coffee is smoother, less acidic, and less bitter.
All you have to do is mix 1 ¾ cups of coarse ground coffee with 3 ½ cups of water and let sit on the counter for at least 12 hours. Then pour it through a strainer lined with coffee filters. There’s a ton of coffee in there so it’ll take quite a while to drip through, but your patience will be rewarded.
Now you have concentrated cold brewed coffee. Mix 1:1 with milk or water over ice. I usually take sugar in my hot coffee, but this stuff is so smooth tasting it doesn’t need any. If you must, for the love of god don’t just dump a bunch of sugar in there, it wont dissolve and you’ll have grainy iced coffee. Instead, make a simple syrup. Put equal parts sugar and water in a saucepan and heat until dissolved, let cool and viola you’ve got a better way to sweeten cold drinks. I keep a squeeze bottle full in the fridge during the summer.
I’m only having a tiny glass since I’ve been awake for 19 hours and coffee is the last thing I need, but it’s so damn good I can’t help myself.
