Y'all! This is SOOOOOO YUMMY! It’s a warm salad. I took #simpletruth chicken breast and coated in #chobani plain Greek yogurt w/ a little bit of cholula to kick it up. Then I coated it in Italian bread crumbs with a LITTLE BIT of Parmesan cheese. Threw it in the skillet and cooked it til done (no oil). I then took fresh spinach and threw it in the same skillet I cooked the chicken in. I used a little bit of extra virgin olive oil (this is will act as the dressing) and wilted the spinach with a little bit more of the Parmesan cheese. It turned out even BETTER than I thought. Needed some red meat in my life today so I used LEAN! It still tastes good and is just so much better for you.

Browned lean ground beef, then throw in zucchini (garlic herb seasoning) and sauté in extra virgin olive oil. Then add red & yellow sweet mini peppers. Throw in some quinoa at the very end and mix it all up. Season w/ fresh cracked black pepper and you’ve got yourself a winner!!!

Spaghetti squash, zucchini & spinach! Yummmmmmy! I cooked the spaghetti squash using the microwave instructions…. While its still yummy and saves you about 30minutes, I think I still prefer the oven method. I added my favorite seasoning and a drizzle of extra virgin olive oil (just how I would fix it if I was using whole wheat spaghetti instead).
