Oh you know just the usual “throw fridge contents into a bowl and try to make it look pretty” for lunch today haha… Garlic roasted sweet potatoes, potatoes, quinoa black bean salad, vegan cheesy spiral used zucchini, broccoli, sprouts, sauerkraut and peanut satay sauce, happy fridayyyy! 😜

Packed lunch for work today: spinach salad with strawberries, blueberries, feta cheese, & cranberry walnut dressing, along with sliced cucumber & garlic hummus 🍓🥒🥗

5-Minute Healthy Strawberry Frozen Yogurt

Yield: 4 servings

Prep Time: 5 min

Ingredients:

4 cups frozen strawberries
3 Tablespoons agave nectar or honey
½ cup plain greek yogurt
1 Tablespoon fresh lemon juice

Directions:

Add the frozen strawberries, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor. Process until creamy, about 5 minutes.

Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.

Ready for Halloween? Here’s a cute little vegan cookie idea that’s pretty easy to make.

VEGAN FINGER COOKIE

½ cup Earth Balance vegan buttery spread

¼ cup sugar

½ tsp vanilla

1 cup flour + 2 tbsp

1/8 tsp salt

½ cup finely chopped almonds

Sliced almonds

Red jam or jelly

Using a stand or hand mixer, blend sugar and butter together until smooth and fluffy. Add vanilla. Meanwhile, sift flour and salt together. Mix flour into butter mixture. Then mix nuts in. Chill dough for at least two hours. Preheat oven to 400° F. Rollout chilled dough into log shape using hands. I recommend making them just slightly smaller than a finger because they will expand a little bit, but not much. (To make the logs look more fingerlike, I squeezed them in my hand and it gave a boney look). Press a sliced almond where the finger tip would be. Bake for 10-12 minutes. Remove from oven and let cool. If the fingers spread more than you wanted, you can take the back of two spoons and press into the sides of the fingers to make them more narrow. Lastly dip the fingers in a red jam or jelly. (I made my own fruit reduction using raspberries, strawberries and blackberries)

Holy heaven above ! ! ! This tea is called the “medicine ball” aka a creation on the “secret” Starbucks menu! If you have a sore throat/cold I HIGHLY recommend; this was exactly what Josh & I needed after feeling crappy all week 🙌🏻☕️

The “medicine ball” contains:
1 jade citrus mint tea bag
1 peach tranquility tea bag
½ water ½ steamed lemonade
+ honey!

Peanut Butter Banana Coconut Almond BREAD 🍞 🍌🥜🤤


A sweet gooey and nutty loaf where the only seeetener is banana and maple syrup 😋


Ingredients -

3 eggs

2 bananas

¼ peanut butter or Almond butter

3 tablespoons agave nectar or maple syrup

2 cups Almond flour or whole wheat flour

½ cup shredded unsweetened coconut shreds

3 teaspoons baking powder

½ teaspoon sea salt

1 cup dark chocolate chunks (any type works! I used minis once and it was amazing!)


Preheat oven to 350F

Chickpea salad sandwich 🥪🤤A super yummy plant based sandwich made with GF bread and butter lettuce.

CHICKPEA SALAD

1 cup chickpeas

½ avocado

1 tsp mustard

1 tsp vinegar

Dash of cayenne, paprika, and salt to taste

Mash avocado. Add in mustard, vinegar and spices. Stir/mash until completely smooth. Fold in chickpeas. Use on bread, tortilla wrap or even in lettuce cups! 😋

YEILD: about 2 sandwiches

Can’t even begin to say how easy this meal prep was! I made two of these little salads 3 days ago & it was still so so good! Used shredded chicken from a rotisserie chicken, black beans, diced tomato, & I added avocado today (so that it stayed fresh), all on a bed of lettuce.
