Deconstructed sushi bowls for lunch today 😍  Short grain brown rice, a bed of mesclun salad, cucumber, crispy seaweed, lime, broccoli, crispy tofu marinated in tahini, soy sauce and lemon juice and sautéed mushrooms, garnished with pickled ginger, spring onion, baked sesame seeds and avocado swirls because is it even possible for me to serve a savoury dish without avocado?😂😂 ✨ The right avocado kind of looks like a heart hehe 💚  Really enjoying playing with my food on uni break, as much as I love the food they give me at my college let’s just say not the most aesthetically pleasing 😂 sending lots of love as always, always keen to answer any questions you have my inbox is pretty empty right now :) -Zoe xx

Today’s lunch!! Rice noodles with avocado, roasted vegetables (carrot, pumpkin, broccoli, mushrooms, red and yellow capsicum, eggplant and red onion) and baked tofu marinated in tomato sauce, soy sauce and misc. spices So delicious 😩😩 Food can be incredibly delicious, fulfilling, nutritious and satiating without animal products, one of the best parts about going vegan is the newfound appreciation you develop for foods and dishes you wouldn’t have considered or given the chance as a non-vegan :)

Oatmeal for breakfast this morning :) 1 cup of steel cut oats and a dash of chia seeds cooked in 1 cup of vanilla almond milk and 1 cup of water and topped with dates, walnuts, pistachios, buckwheat, fresh strawberries, coconut, banana and maple syrup tahini (just mix the two together, it’s 👌👌). Happy Tuesday everyone ❤️️

DAY 49:

Dropped a dress size so happy!

Breakfast: Oats made with almond milk and topped with warmed berries.

Lunch: Leftover roasted tomato & basil soup!

Dinner: There’s nothing I love more than burrito bowl.. oh yes there is! Vegan healthy burrito bowls!! This was so yum. Guacamole, chilli, brown rice & red quinoa, corn, spinach, cucumber and sweet potato fries.

Happy Easter to those who celebrate :) Nothing like a loaf of banana bread on Easter Sunday :) Super moist and delicious-I used ½ cup oat flour, 1 ½ cups wholemeal flour, 1 tsp baking soda, 3 large ripe bananas, 1/3 cup unrefined cane sugar, 3 tbsp brown rice malt syrup, 3 tbsp apple sauce, 1 tsp allspice, 1/3 cup olivani (or any vegan butter), ¼ cup almond milk, dash of vanilla essence and a few handfuls of frozen berries and dark chocolate (I used lindt 90% which is free from dairy milk) see us vegans don’t just eat grass :)

Hummus is a great alternative to butter/margarine on toast if your looking for a healthier choice with minimal effort 👌
