Time for my first and favorite recipe here:

Fruity Egg Muffins

I really love them, because they’re quickly made, are clean and don’t have many calories.

Depending on how big your bananas are and how many raspberries you use, one muffin (out of six) has +/- 113 kcal.

I like to put low fat curd cheese mixed with flavdrops on top. ~♥
A perfect guilt-free dessert,

There are always healthier alternatives to anything nasty! You can easily healthify junk food!

ICECREAM -
1. Frozen bananas + vanilla essence or raw cacao powder
2. Frozen berries + coconut/almond milk + protein powder
3. Greek yoghurt + stevia + cacao powder

PASTA -
1. Zucchini noodles + veggies + homemade tomato sauce
2. Soba noodles + veggies + chicken
3. Carrot ribbons + homemade tomato sauce

PIZZA -
1. Cauliflower pizza crust + good quality cheese + veggies
2. Carrot crust pizza + veggies
3. Flattened chicken breast + cheese + veggies

CAKE -
1. Healthy mugcake: almondmeal/coconut flour + stevia + cacao powder + banana + egg
2. Oatmeal + greek yoghurt + protein powder + egg
3. Watermelon round + greek yoghurt + fresh berries + kiwi

CHOCOLATE -
1. Nut butter + cacao powder + protein powder + coconut oil
2. Coconut oil + cacao powder + stevia + almond milk

BURGERS -
1. Lettuce leaves instead of burger bun
2. Large mushroom caps instead of burger bun
3. Homemade meat patty + fresh veggies on wholegrain bun

My own Kanken & a busy weekend

I somehow managed to survive another week of studying and taking an exam. Now there is only one left to go. 
Normally, my weekends tend to be pretty calm in comparison to the rest of the week, but since it was my mom’s birthday on Sunday, we had do prepare a bunch of stuff for it. We baked two cakes and some muffins, cleaned and tidied up the kitchen and the living room and overall just tried to get done as many things as possible. Meanwhile, I was trying to study as well and not lose my mind over it.
But one event really made my week. I now own a real Kånken backpack!! I have been thinking about getting one for over a year now and when I saw that someones was selling theirs on Instagram, I took a chance and bought it. After some issues with my bank (I’m still mad at them, nothing seems to work out the way it should be), it arrived on Friday.
Although it has a few signs of usage, I think I can fix it and make it look better.

Healthy Banana Oat Muffins

Ingredients

  • 1 cup plain Greek yogurt
  • 2 ripe bananas
  • 2 eggs
  • 2 cups rolled oats (old fashioned or quick)
  • ¼ cup brown sugar
  • 1½ tsp. baking powder
  • ½ tsp. baking soda
  • ½ cup chocolate chips, mini or regular

Instructions

  1. Preheat oven to 400F and prepare a muffin pan by spraying cavities with cooking spray or lining them with paper liners**. Set aside.
  2. Add all ingredients except for chocolate chips to a blender or food processor and process on high until oats are broken down and batter is smooth and creamy. Stir in chocolate chips by hand.
  3. Pour batter into prepared muffin pan, filling each cavity until it is about ¾ full. Optional: sprinkle a few chocolate chips over the top of each muffin.
  4. Bake for 15-20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an air-tight container for up to a week.

Some really fast sketches I drew today of team magma.  I’m super tired and I don’t feel good, bleh, so I just drew some maxie stuff to cheer myself up.  (also I’m tired of drawing chibis and I’m rusty with drawing real people) I got really happy thought when I came home because my best friend decided to clean my house, make muffins and tea, and she basically became a goddess, it was so nice! <3

Anyway, I loved the scene with Courtney when she cried to Maxie because she almost destroyed the world.  I saw it as a cute father-daughter moment. uwu

Vegan Pumpkin Spice Latte Cupcakes 🎃☕️

1 ¼ cup pumpkin purée (or canned pumpkin) but it’s so easy to do (steam and mash !)
1 cup sugar (preferably coconut sugar)
½ cup coconut oil
1 ½ cup flour
2 Tsp baking powder
3 Tsp pumpkin spice (cinnamon, ginger nutmeg, all spice)
4 Tbsp water
¼ expresso shot
Preheat the oven to 350 degrees. Line a cupcake tray with 12 cupcake liners. In a bowl mix the pumpkin purée, the sugar and the oil. Add the rest of the ingredients and mix well until everything is incorporated. Divide the batter between the cupcake liners and place the tray in the oven. Bake for 20/25 minutes or until done. Let the cupcake cool down and remove from the pan.
Honestly they taste exactly like Starbucks PSL 🙌

Gluten free, refined sugar free, dairy free and delicious!

I’ve been looking a while for a clean muffin recipe that doesn’t taste like a pile of dry shit, and after a few experiments, I’ve finally discovered one! 

Clean Oatmeal-Banana Muffins

  • 1 cup vanilla almond milk (you can choose if it’s sweetened or unsweetened, I did a 50/50 blend of both)
  • 1 cup oats (I used old fashioned) 
  • 1 egg
  • ¼ cup mashed banana
  • 1 cup oat flour (just blend 1 cup of old fashioned oats under powdery) 
  • ¼ cup honey (if you usually use creamed honey, just heat it up slightly before using)
  • 3 teaspoons baking powder
  • ¼ tsp sea salt
  • 1 tsp cinnamon 
  • seeds, nuts, fruit, dried fruit (Optional)

Instructions:

  • Preheat oven to 400 Fahrenheit
  • In a small bowl, mix oats and almond milk together and let sit for 15 minutes.
  • In a large bowl, blend together banana and egg. Once combined, blend in honey.
  • In a medium bowl, combine oat flour, baking powder, salt, and cinnamon.
  • Pour oatmeal mix into the banana/egg/honey mixture and blend together, then blend in the dry ingredients.
  • Blend in anything else you want! I added 2 tbsp of ground flax seeds. 
  • Pour into lined muffin tins, about 2/3 of the way full.
  • Bake in preheated oven for approximately 15 minutes. Do more or less as you please. 
  • Makes about 8-12 muffins, depending on how you fill your cups. 

This recipe is honestly delicious, and I’m a picky eater. They’re moist and soft with a hint of banana, and not to mention SUPER filling. My batch turned out to be 110 calories per muffin, so they’re they’re the perfect combination of light and savoury. When I have these for breakfast, 2 muffins holds me well past lunch. Plus, they’re handy on-the-go! If you wish to make these muffins vegan, just use the old flax meal and water trick.
