Mango and banana smoothie with some lime infused dried mango. The banana is painted inside in raw chocolate 🍫🍌 I was thinking today how blessed I feel to have been introduced to this way of life, because I swear I get so exited to eat every single meal rather than just eating mindlessly to fuel my body. I feel like raw, plant based food fuels my soul too. Go fruit yourself! 🍌

Goals before surgery.

My doctor wants me to lose 10 lbs before surgery.

I’m working really hard, but as always, I’m afraid I won’t see any results before surgery.

Which is the reason for getting it in the first place.

My PCOS makes it so hard to lose, even when I’m doing everything textbook correct.

I’m wondering if I show my surgeon my food logs and my improved running times over the last few months if he will realize that I am working and progressing, just not in the weight loss department.

I’m wondering if I explain this to him if he will overlook it if I don’t happen to succeed in this particular goal.

I was asked today by the user citrusodaco for the recipe of the lunch I posted earlier.

I don’t usually write down recipes and just put things together. Since I enjoyed what I made I went back to recreate it so I could take some notes this time.

Avocado Chicken Salad with Cilantro Lime Dressing

Approx 1 pound of chicken, cooked and diced
½ red onion, chopped
2 avocados cubed
2 tbsp minced cilantro (I used frozen, Dorot brand)
2 tbsp lime juice
2 tbsp salsa verde

I made the dressing separately (so I could taste it) and poured it over the cut up ingredients and then mix together.

Makes 3 cups or approximately 4 servings.
You could use it over greens, as a sandwich filling, or on it’s own!

Recipe for Greek Cucumber and Garbanzo Salad

Probably my greatest find for staying fit during bikini weather - this spiralizer! The idea of eating heaps of “pasta” made out of zucchini is guilt free, delicious, and surprisingly super filling. This spiralizer is from Williams-Sonoma and only $39.99. You can spiral cut several veggies in just a couple minutes. Did I mention that zucchini rhymes with bikini? Coincidence?

Here’s my easy fluffy pancake recipe :

  • 1 cup whole wheat flour 
  • 1 & ¼ cup soy milk (or non dairy milk)
  • 2 Tablespoons lemon juice
  • 2 teaspoons sugar (brown or coconut sugar are the best)
  • 1 teaspoon vanilla extract (completely optional)
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda

Measure out the soy milk and add the lemon juice in a medium bowl and set aside for a few minutes. In a large bowl mix the flour, sugar, baking powder and baking soda.

Now add in the soy milk mixture and vanilla extra. Stir only until incorporated.

Heat a large nonstick skillet over medium heat. Pour a few drops of neutral flavored vegetable oil on a paper towel and grease the pan.

Pour batter into the pan on a side that way you can make more than one at a time.

Cook until the edges dry out slightly and the bottoms are golden brown (2-3 minutes for small pancakes.) Remember that the first pancakes are uglier because the pan has to really get hot and you’ll get more practice to flip them over too.

Flip and cook for an additional minute or two (until this side is lightly brown.) Serve still warm and go crazy with toppings ! I like frozen berries, maple syrup, chocolate chips, banana slices, poppyseeds, peanut butter…
