cinnamon vanilla pancakes

The perfect post-workout breakfast. Cinnamon/vanilla protein pancakes with blueberries, kiwis, mangoes, and topped with puréed berries!

Pancake mix ingredients: 1 scoop of vanilla protein, 1 cup of ground oats, 1 cup of egg whites, ½ cup of almond milk, 1 tablespoon of flax seeds, and 1 teaspoon of cinnamon.

Directions: mix all ingredients together in a blender - you should have a nice, thick mixture. If it’s too liquified, simply add more oats. Then cook in a lightly greased pan (I use olive oil) just as if you would with regular pancakes!

Blueberry topping: add and mix together a handful of blueberries and a little bit of coconut milk in a bowl, making sure you crush the blueberries well. Then, purée it in a blender for a few seconds to get a uniform mixture!

CINNAMON (VANILLA) SOYGURT PANCAKES

 7-8 small pancakes / 5-6 medium ones

INGREDIENTS

130g plain unsweetened soygurt
70ml rice milk or any other non-diary one
1tbsp melted coconut oil
2tbsp maple syrup
105g flour (whole grain spelt one or buckwheat flour)
1/4tsp cinnamon powder (or bourbon vanilla)
baking soda (at the tip of a knife)


DIRECTIONS

 In a bowl mix the soygurt , rice milk , maple syrup and melted coconut oil. Whisk until well combined. In a small jar mix the flour , cinnamon and baking soda. Shake well a few times until it combines. Slowly add the flour mixture to the mixed wet ingredients while whisking. The texture should be smooth , sort-of-thick but still pourable. Pre-heat the pan to a medium temperature. If its a non-stick one , no additional oil should be needed. With a spoon pour some of the mixture onto the pan ( 1 ½ tbsp = 1 pancake) and form a round pancake shape. When the edges of the pancake start drying out / bubbles start to form ,flip the pancake and leave cooking for other minute or so . Repeat until you run out of pancake dough. Apples and Cloves

Katniss pulled Peeta’s maroon sweater from the drawer and handed it to him, where he packed it snugly into his carrier bag.  “When will you be back, again?”  she asked, looking longingly at the vibrantly-colored, hand-made cable knit she’d given him for his birthday. It was, hand’s down, her favorite sweater because of the way the color contrasted with his lightly-colored skin, it’s snug cut outlining his well-defined chest and back muscles.  She couldn’t begrudge him if he wanted to take it with him on his visit to the Capitol.  She just hated that he would be wearing it, especially there, and she wouldn’t be around to appreciate it.
