Too many things on my mind. Spent the weekend making delicious vegan food.
Shredded bbq carrots ( faux pulled pork ) or rosemary facasia with cilantro, ginger, lime slaw… ratatouille, and Apple carrot ginger muffins… Oh and roasted beets with apples and balsamic vinegar.
Directions: 1. In a small bowl, mix dry ingredients together. Add liquid ingredients; stir to mix. 2. Heat a small frying pan over medium heat; spray with cooking spray. Add batter and spread into a large pancake size wrap with the back of a sprayed spoon. 3. Cook until browned; flip and cook the other side. Tip: Fill with 2 oz of seasoned ground beef, turkey or chicken. Top with lettuce and Pico de Gallo!
