chocolate uni

I rode my bike to the forest last week and I got lost for a while! It was amazing :’) also this is last week’s spread! (I’m actually spending most of the time doing nothing but watching movies haha)

It starts like this.

We are sitting on the lounge floor in our pajamas and it’s a Wednesday night. There are half empty pizza boxes littered on the table and the credits of a 2 hour long movie is rolling in the background, long forgotten. Eyes heavy from sleep deprivation and exhaustion, and 9 am lectures in the morning, yet here we are and we’re talking about everything and anything, our insides jiggling with laughter. It’s baffling how easy this is; how in the span of a mere month that we’ve been here, this feels like home already. Tucked away on the second floor apartment in our snugly little blankets with steam rising from the marshmallow laden hot chocolates in our hands, this is how most of our nights start like.

It starts like this and God, I don’t want it to ever end.

Laaavely! I’m getting back into baking and cooking now I have a little bit more time on my hands. This week I want to attempt Jamie Oliver’s veg rosti with poached eggs (never poached an egg in my life so wish me luck 😂) and cheese & spinach rotolo. They looked gorgeous in the recipe book and pretty simple too. For now, though, back to revising for my French politics exam next week 😓

Episode 7 of my vegan on a budget series. Choc chip cookies!! Just 60 cents per serve and super easy and quick to make! Full recipe and price breakdown in description.

10:12 am // Good morning, October! 🍁🍂🍃🌲🌰 So happy to have you back ☺️ Here’s a welcoming breakfast to the official Autumn month: cinnamony oats with banana, crunchy peanut butter and dark chocolate plus a caramel espresso ☕️ Let’s see what this caffeine does 🙈 Time to catch up with uni, only had one lecture today so decided it was not worth the commute and stayed home (how lovely it feels to get up after 6am 😴) - hoping for a productive day !! 💪💪 Happy October, everyone!! 😘💛

It would be a crime not to at this time of year. These Chocolate Nests are so easy to make and with only 3 ingredients it’s extremely cheap too !A great alternative to my Maltester tray bake

200g Milk Chocolate

80g Shredded Wheat, crushed

1 Bag Mini Chocolate Eggs

*Crush the shredded wheat in a sandwich bag using a rolling pin

*Melt the chocolate in a glass bowl over a pan or in the microwave

*Poor over the shredded wheat and mix together

*Portion out into cupcake cases

*Top with mini eggs and put in the fridge till solid

Easy !

I’ve had a cake filled week, but that doesn’t mean it should stop. Brownies just seemed a bit to rich so I went for the alternative of Blondies.

150g Plain Flour

200g White Chocolate

225g Caster Sugar

4 Eggs

Grease a square shaped cake tin and pre heat the oven to 180 degree (gas mark 4)

Beat together all the eggs and add in the sugar. Add in the butter (melted) a little at a time.

Fold in the flour till a thicker mixture is formed.

Stir in the white chocolate and evenly spread out into the cake tin.

Cook for 20-30 minutes. Leave to cool on a wire rack and slice into portions. If you can handle something sweeter maybe add an icing on top.
