Butterscotch Pecan and Hot Chocolate Cupcakes!

Butterscotch Pecan Cake
- Butter Pecan box mix
- 4 tbsp butter
- 4 tbsp brown sugar
- handful of butterscotch chips
- 2 tbsp maple syrup
- 2/3 cup milk
Melt butter and brown sugar together with maple syrup and butterscotch chips until bubbly and caramelized. Add milk and stir until the caramel has melted into the milk. Use this butterscotch milk in place of water to make the cake mix (still follow directions for eggs and oil). Mix cake mix. Bake at 325 for 15 mins (for minis)
- ~ 1 cup butterscotch chips melted. Add 4 tbsp soft butter.
- mix with 1 tub cream cheese or buttermilk frosting and 1 cup of confectionery sugar.
- Frost cakes and top with chopped pecans.
Hot Chocolate Cupcakes:
SUPER easy. Instead of water, make hot chocolate and use in place of water for a box mix or other recipe of chocolate cake. Top cupcakes with chocolate frosting and mini marshmallows. DONE! :D
(I did expand the chocolate frosting with butter, confectionery sugar, and a little vanilla extract… because so many little cakes!)
